If you're looking for different meat ideas I have a few. Have you ever eaten the meat from a black belly sheep? It's the best lamb in my opinion. I'd love to see ya do a a proper chuck roast too. And smoke some goat, shred it, and make gyros. When done properly, they're amazing.

You can use your favorite hot sauce.
