  • This is my second Filipino dish cooking - GINISANG AMPLAYA. I'm eating it with my husband and discussing food, Russian vodka, Filipino way of cooking with Coca Cola.

    Coca cola you can marinade in fried chicken, sprite you can cook in big shrimp with garlic,,, royal to orange also cook in sauce of fried chicken

    You can also try ampalaya salad. Blanch the ampalaya, add red onions, or if you prefer sweet and sour by adding vinegar, sugar, a bit of water, fried anchovies or dilis. Here, in the Phils, Filipinos love to taste umami flavor. Every cooking either if these ingredients are a must MSG, Knorr magic sarap, bouillon cubes, soy sauce, patis.😅

    Valentina try to cook adobong talbos in tagalog term.Talbos name in tagalog.In bisaya name udlot.It's a leafy vegetable dish.Just collect the medium amount of sprout or shoot of sweet potato leaf and kangkong or water spinach leaf.Cook it with soy sauce, ginger, union garlic,bell pepper, crushed pepper.with any little slice of fried fish chicken or pork meat.
    Saute the ingredients in the cooking oil in a quick fry.
    After put the vegetables leaf and mix.Put enough soy sauce,crushed pepper and mix until it mix completely and taste.When the taste is enough.Then cover the frying pan in a slow heat at about 2 minutes or less then serve.Now you have adobong talbos in tagalog and adobong udlot dish in bisaya.

    Sauteed with garlic,onions,n tomatoes then add can sardines n put the ampalaya,it is done!!! To lessen the bitterness of ampalaya,add salt in water then put ampalaya n stand by for 5 minutes then wash the ampalaya,it is ready for cooking!!!

    Lots of Filipino dont like Ampalaya because of its bitter taste. But its good its lots of vitamin. And if you're Diabetic and Anemia.

      Kinilaw is not cooked as we know it. It is raw fish “ cooked in vinegar. “

    When cooking ampalaya avoid mixing it in the pan to lessen bitterness and and put some tomatoes at onions you can also add small dried shrimp. Thanks for featuring our country . You can also cook chicken or pork adobo using sprite or coke. . Love you Valentina and family. ❤❤❤❤❤

    step1- put oil next put union and garlic and mix it.
    step2-put the ampalaya and put soy sause and sisoning "magic sarap" wait untill become smooth.
    step3- put eggs and mix it. thats it simple but delecios.

    Hi Valentina, to remove the less bitterness, after slicing and washing, you should mixed it with salt use your hands... then wash before cooking! thats the secret to lessen the bitterness of the ampalaya...

    My favorite vegetable! You can also soak and rinse with vinegar plus salt to reduce bitterness. Filipino "Ginisa" or sautee should always include onion, garlic and tomato. Also patis (fish sauce) is a standard condiment for that Filipino "umami" flavor profile.

    O squeezed hard the bitter gourd until it becomes soft and gets out the green liquid from the bitter gourd then wash with water to get rid the salt before cooking...

    Ampalaya is one of the healthiest veggie can anyone eat ,the bitter it taste,the nutritious it is, I never washed it to get rid of the bitterness taste,I sliced it thinner so that it's bitter taste will be more neutralized, you can add also sliced tomatoes and can add ,either shrimps,ground pork or beef.

    Ginisang ampalaya. You can add meat or sotanghon noodles or shrimp. If you stir fry , add garlic not tomato .Ampalaya is good for diabetes.

    Cooking with coca cola is rare in Filipino culture but I know some who use lim-o-lime soft drink as tenderizer but it's not common.

    One of my favorite dishes. You can add ground pork, beef or chicken to this. Ok to add diced potatoes if you want. Add some fish sauce too

    If the ampalaya is young and fresh, no need to remove the seeds Val. The seeds are good for regulating blood sugar and hypertension

    If you put dash of Liquid seasoning (Maggi or Knorr brands) and oyster sauce in most stir fried or stewed dish enhance the flavor to the next level and makes it tasty or savory.. We also use bullion cubes or granules like Magic Sarap or any chicken spice. I love chopped mushroom and bell peppers also. All the above are good to add in cooked rice to flavor.

    To remove some BITTERNESS soak it in a water with SALT for 20-30 minutes but don't put so much salt. Then after 30 minutes RINSE the BITTER GOURD with water 2 or 3 times then ready to cook. I like Bitter Gourd if HALF COOKED only, I don't like over cooked.

    Add shrimp to the ampalaya….we have a dish called ampalaya with shrimp….. diabetics eat ampalaya for their diabetic condition.
    We drink a lot of coca cola plus a
    lot of our pastries are sweet so there are a lot of diabetics in the Philippines.

      Eating Too much Rice is not Healthy, Turn into Sugar THATS Why So many Filipinos Has Diabetes….. If u want to Eat Rice Every day They Should Eat Brown rice ….     This dish is one of my favorite dish now. I did not like it when I was young but when I got older, I started liking it maybe because my taste for food changed. Just like with alcohol. Like Sergei mentioned about beer, I didn't like the beer taste at first but liked it later on when I got older😅

    ginisa means sauteed & normally sautee first the spices ( garlic, onions, tomatoes & ginger for some dishes ) before adding the main ingredients/vegetables. We like to add more eggs to ginisang ampalaya for bfast. You can sautee almost anything ( veges with meat/fish or veges only). Enjoy !

    To minimize the bitterness of ampalaya Don’t stir the ampalaya when cooking we used to do the same thing you do but we discovered that if you don’t stir it there is almost no bitterness at all

    If you have SESAME OIL, add one drop of 1-spoon full after cooking and put a little bit MAGGI MAGIC SARAP for more better taste.

    Amapalaya or bitter gourd is an healthy vegetable source of vit c and it helps in those have an anemia. Maybe next time you can slice it in much thinner to wash it better in salts to less the bitterness. Everytime we cook in some sauted dish we always put onions, tomatoes and garlic to our dish to have an aromatic taste. In 11 yrs coming back always in here, what do guys filipino foods you usually been cooking or eating in every day?     I like dbitter taste of d ampalaya so i didnt use salt to wash it, to remove or lessen dbitterness.😊. I like d salad fresh slices of ampalaya 😊, or grilled it and make it into a salad...

    My style of cooking Ampalaya with egg, is First I soak the veggies in water with lots of salt, then drain after say 5 mins. Then, basic ginisa, garlic, onion and tomato then add the veggies and I add a bit of oyster sauce for that Umami flavor. 🤤🤤
    Sinigang is sour, a bit salty, a bit spicy.

    That's true,, Philippines drink a lot of coca cola...and other drinks like milk tea thats contains too much sweeteners thats why oh Philippines has a many dialysis patients according to survey,and too much alcohol too..thay dont know tea in the Philippines! and that's sad! maybe just a few drinks tea
