I make mine with the same ingredients you used, but with the addition of beef oxos instead of chcken, and a sprinkle of mixed herbs. In a casserole dish and in the oven. Yummy! I find it fascinating to watch fellow north easterners cook traditional recipes, that have been passed down through the family, and how much they vary, in different areas of the north east. Nothing to do with Pan Haggerty, but an old school comment. I remember 'millionaires' shortbread with custard, and a coconut/jam/sponge desert in the 1980s (UK school). My great Aunties were dinner-ladies in the 50's-70's and they were masters of these type of comfort/hearty/filling foods. Looking back at my early life in a council estate, I now realise how much wholesome, good, old-fashioned food was good for the poor kids (including me). What a different world back then - Braw!
I'm biased I know, but having been born in Durham City near to our beautiful Cathedral, but then moved to London for the last 50+ years; I can say that the people in the North East are the best in the world. Amazing people, kind, friendly and welcoming. I still visit Durham City and all that area; it's where my home and heart belong. You're all amazing.
My Gran lived with us and cooked all our meals as my Mother and Father were working. She was formerly a Cook Housekeeper for the Parish Priest, and so all our food was good hearty food similar to this. It doesn’t matter how much money I ever had, I would always eat this type of foods.

This looks delicious too. I definitely feel a trip down memory lane coming on, although I might leave out the bread and dripping for breakfast. What wonderful names for these dishes. 😊
Corn beef potatoes carrot and onions in my house but I'm diabetic so now it's corn beef carrots and turnip . My daughter leaves outside carrots and use sausage meat in stead of beef or bacon she had sausage meat that needed using and they liked it

Gosh that looks so tastey i remember my grandma made something like this 70 yrs ago with left over leg of lamb from the sunday dinner hers was this recipe with out the cheese topping but with fresh podded peas in the layers we never have left overs at our house now we eat the lot Ha HA looking forward to tomorrow recipe XB

Been baking today, so oven was on. Made this and let it cook slow whilst clearing up the carnage in my kitchen!! Its absolutely banging! (I was hungry as hadn't eaten much). My mum used to make something like this with leftover meat for a Monday/Tuesday dinner. Will have this second portion when I get home from football tomorrow. ❤ BTW, Miss Missy is a cheeky little rascal, pinching the cheese, bless her x

The one you made with corned beef,we always called it potatoe pot,and 13:20 the panackalty we did was onions sliced potatoes and bacon,but we never chopped the bacon up.We used full rashes of bacon.We never put carrots in it.x
You can easily cut onions on the mandolin, you had them the wrong way around, you should have had the face you cut facing down. Just you and Ian keep up the great videos X

My dad used to make us this if we were poorly to cheer us up it was delicious but no carrots it was tin tomatoes and corned beef plenty white pepper yummy 🎉
This looked really nice. My mum used to do 'cheese and onion' in the 60s and 70s. I can't remember how she made it but I didn't like it despite me loving both cheese and onions. It did get boiled up in a frying pan but must have had something else in it that I didn't like. I love cheese and onion sandwiches though. Keep up the good work it is a really interesting channel.
My mum (and us) make a version using just Bacon, Onions and potatoes but its cooked in the oven with a a stock cube but I always knew it as hotpot and we always had it with crusty bread and butter and brown sauce. but I might give this a go.

@@natashahangouts387 first time I heard of it was on the BBC cooking series, the Hairy Bikers which if you’re not familiar with the show the two guys on it are/were from the north of England, one who came from the area that the dinner lives in is called Simon(Si) King the other who has recently passed away (Cancer) was from the west coast and was called David (Dave) Myers. They made this dish following Si’s mother’s recipe. It is included in one of their cookbooks.
I hate cooking I really really do..... however just this week my other half said I had made the BEST stew !! I didn't tell him I used bendy carrots and celery..cut the 'legs' off the potatoes ..in fact all the veg were past their best...The meat was fresh though !!

Me Mam used to do a fry up of the leftover roast and veg on Mondays when I was a bairn back in the 50s and 60s. Nothing ever wasted, if you added a bit more to the leftovers you had a decent dinner. 😊 👍

I do mine with scallions and leeks plus shredded cabbage.
My mother used to do it with sausage onions bacon comptons gravy salt flour to thicken the gravy and topped off with loads of slice potatoes
