As Shepherd's Pie goes you made a great Cottage Pie.
The way to not cry when peeling and chopping onions is years of doing it, one develops immunity like getting asbestos hands. One can never put too many herbs in. I always add a tin of Baked Beans to a Shepherds or Cottage Pie (depends if Lamb/Mutton or other meat [substitute]). One does not have to peel carrots if not been stored over winter, just wash under the tap. A teaspoon of Marmite or Vegemite and Worcestershire sauce adds a nice tang. Glad you used a good wine but were a bit stingy with it, never cook with a wine one would not drink. Cottage Pie got its name from the fact once nice and brown it looked like a thatch roof. If one wants to add calories sprinkle a nice mature/vintage grated cheese on top before cooking in oven. My Mother always used a fork to mash the spuds and half a pack of real butter, a tablespoon of milk(the cream off the top of Channel Island [Gold Top] milk, pre homogenised days), never use a blender, you will end up with a cement like mixture as the gluten is released.
You could save time by washing the carrots and not bothering to peel them
A meat and pastry pie could be square as well, who says they're round. A dish of any shape or material will do.
My mother in law used to says things are only cooked when the smoke alarm goes of, hence why my wife only likes cooked food when it tastes like charcoal. 🤗

A great laugh - shepherds are spinning in their graves. tip 1: get all ingredients out and prepped before starting the cooking. Tip 2: onions - sharp knife - cut top & bottom but not completely through - peel outer skin - breathe through mouth. & fine chop (sharper the knife the better.)
I was flicking through watching just odd bits before I watched the whole thing later today, and the first thing I heard is "What is a knob!?"😆

That was great to watch Yvette and that looked delicious 😋 The other half clearly approved! A Pyrex dish works perfectly well for dishes like that, I've used them myself when I've not had a proper casserole dish handy, no wucking furries!
You need to sprinkle grated cheese on top before putting in the oven.
Put the onion in the freezer for 15 minutes before and you won't cry when chopping :)
We call what you call a "pot" a pan in the uk. Both that you used we would call pans haha thats why it might have been confusing if you used a British recipe. Unless it says fry or frying pan I usually assume pan means a "pot". We would say we cook pasta in a pan but its actually in a "pot" hope that makes sense. you aren't going crazy we are haha

Cooking is very like DIY - ability is a state of mind with a dash of knowledge and having the right kit to hand. You also do NOT need to be a slave to any recipe once you get started and confident.
Everyone and anyone can cook if they accept the fact.
I love cooking, and stews/pies/casseroles are frequently on the menu here - I do not own any sqaure/rectangular "casseroles" - stainless or glass, round pots are all that I have.
One thing that I do find odd - you like onions and garlic, but not leeks!

Don't use metal on none stick pans you should have a plastic whisk and the spuds could have been mashed in the Pyrex dish and put back in the pan for assembly but hey looks great and disaster averted for first time cooking on cameras.
Shepherds Pie is made with minced Lamb meat; so is this more a Cottage pie but that’s made with minced beef….I’d call it a vegan Cottage Pie…

Ok, your learning to be a true house mouse and trying to cook. Alright next time you out shopping or on the interweb look for a 'steel soap bar', looks like a bar of soap but it's steel. This is used when you cook with onions, garlic of fish as when you wash your hands rub your hands over the bar and it'll take the strong smell away.
