  • In this video I'm reacting to some different Lemon Pasta versions!
    The first one is the Ina Garten's version and I must admit that she made a good job (as opposed to when she made Pasta Arrabbiata).
    The second one is from Sam the Cooking Guy, he definitely made a wonderful version (except for the parsley), he basically mixed Aglio e Olio with Lemon pasta and it looks super interesting, I would love to try his version!

      Lemon Pasta can be good if they don't overdo the lemon,, not into overpowering citrus. I prefer super cheesy pasta dishes. I mean who doesn't love cheese ( I love making a nice Fontina, Provolone and Mozzarella blend to melt into any type of pasta or into a sauce for pasta with some Pecorino Romano or Parmesano Reggiano grated on top). As to garlic, I love garlic, I add that in to my taste levels. Use good quality garlic and Sautee or roast properly adds a level of flavor to any dish. Also you should react to the new Epicurious video on "4 Levels of Pasta Bolognese" to see your opinion.

      I love lemon pasta. I do try to keep it traditional with my herb garden. I have made one with a shrimp and Maryland spin

      I like the idea of lemon pasta but no lemon here, I try it with other citrus kind fruit instead.
      Lime and Keffir lime is pretty good.(I make it today as well)
      Bitter orange has nice smell but mildly sweet and sour which is I'm not a fan it on pasta dish.

      Never really had it - here in rural Canada, people often do butter and lemon juice, just very meeehhhh - then I tried your recipe, and it's possibly my favourite quick pasta dish

      My fave legit aficionado -> Vincenzo!
      ( I stopped watching Ina Garten anyway esp since she reFused to meet with a child connected to The Wish Foundation whose singular wish was to meet her; not even cook with her & she refused to do it. Of course people freaked out on her website/twitter etc. & many months later she relented agreeing to meet with the kid but then his mother told her the child was no longer interested. Sooo done with her!)

    I agree with you Vincenzo. Lemon pasta is plenty potent enough to stand on its own without garlic. It's yummy any way. 😆😃🤣 (Mint would be tremendous, Vincenzo; Iove that idea.)

      That's changing because of content like Vincenzos Plate, and Pasta Grammar. We're learning.
      In my opinion, the best comfort foods are, ahem, #1. Italian, 2. Mexican, 3. Deep south USA, 4. Asian, 5. German.

    Yes, there is one reason putting garlic in the Spaghetti! Italy is Vampire free - in the rest of the world the vampires are existing.

    Vincenzo, I made your version of lemon pasta, added shrimp, one scallion form the garden, garlic, ginger and capers (I have a huge jar of wonderful capers). I did not have parsley nor basil :( Your advice as to preparing the sauce to receive the andante pasta was gold. I even put the lemon halves in the pan and then into the boiling pasta water. I did make one error, as I never used lemon zest before, I forgot to grate it before I squeezed the lemon, but I did get some zest. Noted. It was so good, thank you my friend! I never would have thought of this recipe in a million years. My friend is allergic to shrimp so I will make this for her with scallops next! She bought me a nice iPad stand so I can use it as I cook and watch you show!

      You weren’t paying attention. NO GARLIC IN LEMON PASTA. He really only made pasta aglio e olio with lemon, not pasta al limone, which is a classic pure dish.

    Ever since I saw your caccio e peppe recipe like 2 years ago, I've been using Pecorino Cheese for any pasta, and it has been the best for flavor and my lactose intolerance since it's sheeps milk. Thank you good Sir!! 👍

    Lemon is hands down one on the most neglected ingredient in the western kitchen. I replaced almost all vinegar with lemon. Not only is it healthier - it is so much more tasty.
    My favorite vinaigrette for example: lemon juice, olive oil, green peppercorn, salt, pepper, chiliflakes, lemon balm, mint, parsley and chives. Works absolutely amazing with potato salad ;)
    And chicken in a pan with lemon slices, lemon juice and then bathe the chicken with the lemon butter...

      As someone that doesn't like vinegar your "vinaigrette" sounds really good but it isn't really vinaigrette. Vinaigrette has to have vinegar. It's literally in the name.

    Sammy lives in San Diego Ca. We love our Sammy! I'm Italian born and raised in CA and not EVERY meal has to have garlic. Sometimes they overdo it here! But delicious none the less!

    When I make any lemon pasta, I always use capers. Not sure if Italians do this or not but I love them

    I put garlic and lemon almost everywhere. I just love both that much. 😂 Both fresh only. Never cooked. I had the decency to abstain for this, but nights on days off are garlic nights. I'll eat about a full head of the must pungent, spicy Spanish and then try to save my blood pressure from falling through the floor.

    I agree with you about the garlic, made it your way the first time it was delicious! The garlic argues with the lemon…takes away from the dish!

Start with a classic risotto base (like Arborio rice and broth), then add fresh lemon zest and juice near the end for a burst of citrusy flavor. Finish with Parmesan and butter for creaminess.     To answer your question re garlic, garlic is very healthy for you. This is the main reason I add it to dishes, but I also like the taste. I am Bulgarian-American, and in Bulgarian cuisine we put garlic, onions and chilies in practically all dishes. It is natural antibiotics and kills bacterias as well.

    I see it alot in your reactions as well as other about the garlic. I can't speak for everyone but I know it my house growing up it like salt and pepper. Maybe it's an American thing but it's just like a normal seasoning. Alot of times it's powder but garlic either way.

      I am learning that a large amount of garlic is very important for some people especially americans. My american friends always use 5 cloves of garlic minimum for aything they do

    I like thin pasta myself and I definitely would prefer butter over oil in this dish . I would use oil with onion and garlic ,but butter works better with lemon for me.

      Great idea! Butter is also a great option but if the recipe requires oil, like aglio e olio, you have to use oil for that.

    Vincenzo I completely agree with you ...what's the deal with putting so much garlic in everything I don't get it... I'm Italian also and I know that it is a myth that if you are Italian you lace everything with garlic this is so untrue. It is really a feature of Americanized Italian food. So yes I agree the dish does not require the garlic. And I especially love your addition of the mint. Brilliant❤....but hey still waiting to see your video on coffee with pecorino 😂😂😂😂😂😂

    When you juice your lemons, use a non-electric juicer and use the pulp left in the juicer too and add it to the zest for the sauce.
    I made it for two persons and did NOT share. 😂😂

    Hey Vincenzo, I have made your lemon pasta and it was delicious! One comment I would make on Ina's recipe, I know in your recipe you added in Pecorino which is salty so I think the critique on extra salt might be misplaced since in your recipe you added extra saltiness with cheese but she chose just plain old table salt instead.

      You’re wrong. Vincenzo didn’t add EXTRA saltiness with cheese. He added cheese that is salty by the act of its manufacture. You do not need to add salt directly to the lemon juice and butter as Ina did. That is completely wrong. That’s what Vincenzo is referencing, and he’s absolutely correct. This is a lemon sauce, not a salt sauce. Your interpretation of the salt in Pecorino Romano is inaccurate. You seem to know nothing about Pecorino.

      Ciao Vincent, thanks for your comment, but it is not very correct. Salt should never be added directly to the sauce, unless you are preparing tomato sauce, in the case of lemon pasta just add more salt to the cooking water, the cheese does not have a lot to do with this thing

      @@kadenduiffard2388 I think you're comment is a bit condescending since there has been numerous times where Vincenzo has avoided adding salt because he was using pecorino, like carbonara, and to say it doesn't impact the overall salinity of the dish would be mistaken. The addition of pecorino cheese enhances the overall flavor of the dish just as adding salt does due to the glutamates and overall high salt content in the cheese[1]. While the flavors [between salt and pecorino] are different, the reasoning behind adding either to a dish are similar; both pecorino and salt add additional body to the dish [2] and hence can be thought of as substitutes [3,4], while I would argue that pecorino is a better choice, due to the additional flavors it imposes, the culinary reason for adding salt to the sauce is still valid, which are to enhance the overall flavor and body/mouthfeel of the dish.

      @@vincenzosplatejust curious, is there a reason why salt is not usually added to sauces except for tomatoes (and why does that exception exist)? I hazard to say it's because the salt is more evenly distributed in the pasta water and gives the pasta flavor is part of the reason.

      Another thing to consider is that Ina used Parmesano Reggiano, which is almost as salty as Pecorino Romano. There is no reason to add salt to the sauce in this recipe except out of habit.

    Hi Vincenzo. I have a random gnocchi question for u. Could you use gnocchi as something to remove salt in a dish that you went overboard with the salt. PS love you videos.

      @@vincenzosplate Of course, why indeed. Just use a potato over the gnocchi. Your a wise sage. I’ve never tried lemon pasta. I like pasta and lemons. So it’s a must to do!

    I like garlic, but I usually don´t put it in pasta and not really like garlic in chili sauce. I prefer garlic to fish.

    The reason he put garlic in it is because thats the way HE likes it. There are no laws when it comes to cooking for yourself, nor even in a restaurant. Otherwise, it wouldnt matter what restaurant you go to, if they all do the same things. Then theyd all taste the same !!!

      Although taste may always be subjective, I still prefer to have my lemon pasta in a more milder taste, some people might find garlic and lemon too overpowering hence why it is not always recommended to add garlic into the dish.

      I agree, I often get suggestions to use more garlic. But it's too overpowering and I want the subtle flavours of the dish to stand out more.

      Because Italian immigrants put garlic in everything. Euro->US immigrants were economic immigrants, ie starving and penniless. Also consider the great depression impacts in the US. Garlic was cheap and added flavor. Adding garlic to things today makes those things taste like mom & gram's cooking. Idgaf about being faithful to any eurocrap. I do care about recreating my mom & gram's cooking.

      @@vincenzosplate chef i am from lebanon been suffering sever weight loss because of problems with my digestive system. i've been watching your videos and started making fresh food every day made fresh pasta was perfect on first try, carbonara, fresh fettucine al burro and today cacio e pepe and prepared a pizza dough for tmrw, i cant thank you enough been putting back the weight i loss and the food is not upsetting my stomach
