      Wow Vincenzo! Your nona’s lasagne has to be my next project!
      I already saw the Cannoli granny and treated my family to Amatriciana and Cannoli for desert on a mountain pass in the mist when we were looking for a nice spot away from other people in the lock-down. (I don’t know if that dessert is right for that meal 😅😅 but it was amazing).
      Also we don’t get vegetable lard where I’m from. What is it made out of? I’d like to find a replacement somehow.

      No, no, you can not prefer one before another. It is like saying which one of your children you prefer, not possible. I might start trying to make cannoli though, I am a sweet tooth😎

    I really felt sad when you said you haven't seen your nonna in 2.5 years given how tough the covid situation was in italy and australia. Hang in there. Hoping the situation gets better so you can go to italy again 😀

    I remember going to my grandma's for Sunday dinner and family dinners when I was a kid, some of the best food I've ever had! Even just having breakfast at her house was special.

    This video brought tears to my eyes. It really did. You are 100% correct. I wish I had a Nona or even a mom to learn from. I am thankful for your channel and others like yours. Such as Pasta grannies etc. I'm an Italian American woman who has been without family from when I was 17 years old. I am now 76 years old who hungers to learn all I can. My grandparents, who I never got to know came from Sicily. Catania and Massena. I love my country but my heart belongs to Italy. Thank you for this video.

    this is so heartwarming. my family is from sicily and naples originally (american). we have manicotti every christmas and we do the same thing with the crepe pasta

    Vincenzo you made me cry with your Nonna.
    My Nonna went to heaven 5 years ago. Her hand made ravioli, macaroni etc were out of this world. Infact everything she made was out of this world.
    Some of the most basic meals were her best. Her pasta fagioli, incredible.

    I am first generation Italian…in Canada. I’ve recently discovered YOU Vincenzo through Pasta Grammar, and I have been watching the Pasta Grannies ( Nonna’s) for a couple of years. With these three channels, I am the happiest ever. I have re-created dishes I thought I would never find the recipes for, and found so many new authentic recipes. Thank you thank you thank you.

    Vincenzo, you speak to my soul. Your empathy and love for food is fantastic. I have only discovered you today and you have immediately become my favorite video chef. I never knew my Nonnas, I am in Australia but my mother was a great cook and passed many techniques and methods on to me which I cherish. I absolutely love your enthusiasm and skill in conveying the importance of these video chronicles and your fondness for these amazing women. Thank you mate.🍝

    I wish I could spend just one day with them to learn. Or well, just to be amazed, because you need a lifetime to have this level of skill.
    7:55 Eggshells! That's how I measure for zabaione! Equal parts measured in eggshells lol.
    This also reminds me of this video I once saw "How Tomato Sauce Is Made In Italy" by Insider Food, 3 generations of women making tomato sauce, each generation getting more responsibilities as they age. Just wonderful!
    So much love and awe for this skill and knowledge!

      In the cooking community, there are several videos in which people from older generations recreate their prized dishes. My advice to you is to learn from these Nonnas and Nonos because they know what they're doing and we'd like to learn the skills they learned and pass them down to future generations. These people are already a part of our culture, and their techniques have become traditions. So brace yourself and learn from the best.

      @@vincenzosplate I know! Mine are all dead now, but when I was little one of my nonnas used to make meatballs with sour cherries. I tried to recreate it with recipes on the internet, but it's not as good. Only they can tell you how to really do it.

      Unrelated question:
      My birthday's coming up in 2 months and I thought about making pizza. Of course you need a whole meal, but sadly enough they don't sell fiori di zucca here so I thought of melanzane fritte as a starter, apparently that's Neapolitan as well. Then I thought of some great octopus I had in Sardinia once, and apparently there's a Neapolitan classic called "polpo all'insalata". Looks like a Neapolitan theme to me. Still need a desert, but no cannoli (Sicilia), no zabaione (somewhere in the northern half), and no panna cotta (Piemonte). So I looked up Neapolitan deserts and all I got was disappointment. All very heavy stuff: cakes, pies, fried,... Great to have when sipping a coffee in the afternoon, but not that great after so much food. So do you know of any hidden Neapolitan gems that are light and sweet? The perfect end of a meal? If not: whats your favorite desert (and it can be cannoli, zabaione and panna cotta)? Also if you have any more suggestions like "this would be so much better" please, by all means do please share them!

    I almost cried with joy watching this video. My love of food comes from my grandmother. She was the matriarch of my family. She was so full of life and her life was cooking. She ran a catering business and I grew up as a child crawling around her ankles as she cooked. All of our family occasions revolved around her cooking. My friends would always conveniently show up at my house at dinner time and my gran always made way too much food for just the family so she would feed everybody. Everyone who crossed the door got sent home with food. The kitchen drawers were stuffed full of all her handwritten recipes. And she cooked with such love. She would prep for days. She would cut peppers and onions just to make bases until they were fine like salt. I would tell her to just use the blender but she said that blenders just make it mushy and doing it by hand, even if it took hours and hours, was better. She loved nothing more than seeing people be happy after a meal she had made. She used to tell stories about her memories of all the different dishes she made. Each recipe was special to her, part of her life that had been lived to the fullest. She was from New Orleans and learned all the dishes of all the European migrant communities there, and she also lived in the Middle East and Britain and traveled all over Europe. Learning as she went. There are no better cooks in the world than people who have been cooking for their families day in, day out, for years, with love.
    Sadly, she passed away three years ago. Seeing these nonnas and the love they have for their craft is both beautiful and brings up so many powerful feelings in me. These are precious, special humans.

    Grandmas are the best. Sadly my grandmas are not with us anymore, but they showed me how to cook and how much better home food, maybe not perfect but made with love is then restaurant one, even from best chefs.
    Subscribed and for sure I am gone try your nonna lasagna. Never thought you can make it with crepes.

    Pasta Grannies is fabulous. The nonnas are incredible and when they use rolling pins you’ll be blown away. It’s gotten me to make pasta. You don’t need a machine and I bought their cookbook. I tell everyone to watch the videos.

    Oh this episode makes me so emotional, I lost my Nonna in 2004 and I miss her so much every single day. She taught me so much about life, but especially about cooking. I spent many hours in the kitchen with her watching how she made all of her amazing Italian dishes. I hope she’s proud of the cook I have become. ❤ Vince so your Nonnas are beautiful

      @@carlo70no I already have downloaded a few of their shows. If they wrote a cookbook I’d still buy it. Thing is, they’re not using our almost scientific two cups of this, one tablespoon of that method. They are using a pinch of this and a little of that. They are probably also adding a big helping of love. All of that means that their way of cooking, and their individual ways of doing it will pass from this world with them. In the mean time, they are a right proper treasure for those they cook for.

    I had no idea Pasta Grannies was "out there". But you introduced me, and now I have lost days of productivity, but hope for days of wonderful food.
    Of course your Nonna is special, I have loved videos in her kitchen, but so are many others.... Get back to visit; I lost mine very young and always regret not having more time.

    clara`s recipe for the cannoli has become one of my favourite but, living in sheffield, i am using stainless steel canes . absolutely beautiful, and yes, lard is a must

    Looks delicious so much we learn from our parents and grandparents. Both mine are gone now including my parents. But they left us a great legacy of great cooking with family. 🥰😊

    I agree with you!!! The nonnas are the best, much better than certain celebraties so called chefts. Been watching the nonnas for a few years now, and enjoy each and everyone of them. Funny, spirited, strong, and so so loving! Brave nonnine! I secretly believe that making pasta is the secret to longevity!!!😁
