Tagliatelle with Lemon & Parmigiano Reggiano | Gennaro Contaldo

- This recipe brings me back to the beautiful sights and smells of the Amalfi Coast. The trick is to use good quality lemons and a generous quantity of Parmigiano Reggiano.
INGREDIENTS
3 tbsp. Extra virgin olive oil
1 Garlic clove, finely chopped
1/4 Red chilli, finely chopped
Handful of parsley, finely chopped
25g Butter
Zest & juice of 1 lemon
20g Parmigiano Reggiano, grated
320g Tagliatelle
Salt
METHOD
1. Bring a large saucepan of boiling water to boil, add the tagliatelle and cook until al dente.
2. Meanwhile, heat the olive oil in a frying pan, add the garlic and chilli, and sweat on a medium heat for a couple of minutes. Add a ladleful of the pasta water, add the butter, and allow to melt, then add the lemon juice.
3. With a pair of tongs, add the cooked tagliatelle to the frying pan and mix well. Stir in the Parmigiano Reggiano and parsley, then serve immediately with freshly grated Parmigiano Reggiano and lemon zest.

I would have never thought about mixing parmigiano Reggiano and lemon.
Today I tried it with scaloppina al limone: Veal cutlet with flour, salt and pepper, fried in butter, for the sauce lemon, little bit of water, lots of basil, return the scaloppina to finish cooking, then off the stove and added the parmigiano Reggiano. What an explosion of flavors! Parmigiano Reggiano truly is the king of cheeses.

I have eaten this fettuccine with butter, lemon and parmigiana Reggiano and it was fabulous! I ate this at a fish market in Alabama a few weeks ago and I plan to make it soon. I have been looking online to find a recipe thinking it was Italian but could not find one that had ingredients I had tasted. So I knew the owner was Greek and started looking for a Greek recipe and BINGO here it is…😋 I am eager to taste that wonderful fettuccine once more. It also came with chicken. Best pasta I’ve ever eaten.

Nice - I haven’t made lemon pasta in quite a while but it is so good! I would love to have a lemon tree but I live in Canada. I did try to grow one from seeds but then I killed it when I left it outside too long. I’m going to try this for sure this week. I even have parsley growing in my garden already.
