My version of Japanese Hambagu

  • This recipe is a mix between a hamburger and meatloaf, but it is served with rice and made with pork. It is simple but so delicious. The pork is super moist and is one of my kids favorites!
    Recipe
    780 grams ground pork (1pound7oz)
    200 grams diced onion (1 small)
    26 grams panko (2/3 cup)
    2 eggs
    55 grams milk (4TBS)
    Garlic, salt and pepper to taste
    First saute your onion and allow to cool completely. Then season the ground pork with the onion, panko, milk and garlic, salt and pepper. Once that is all mixed well, form your pork patties. Size is up to you but leave a little indent in the center. Once they are formed, allow them to sit for about 30 minutes.
    Next, heat up your oil (maybe 5 Tablespoons) (you can use more but I prefer less) and cook your patties. Cook time varies but usually 3-5 minutes per side. Once the juices run clear, it should be done!
    Serve with rice and ketchup and enjoy!!

    just for references, i use beef and pork 50-50 mix. and make sauce with the same pan after fried, ketchup, worcestershire sauce and sake. goes very well with white rice.

    つなぎ入れて合いびき肉使うのは日本独特かもしれませんね。ハンバーガーのパテは牛100%が基本ですし。

    Oh I will add this to my list. In Germany we have something called Frikadellen and it is pretty similar, definitely going to try the Japanese version.

    Is it only made with pork traditionally? Have you ever made it with beef, chicken or turkey? Is there anything people like to top these with? Thank you for the recipe!

      They also have chicken hamburg, but most households use a mixture of minced beef and pork, but authentic restaurants use American-style coarsely ground beef.

    I’m curious if using veggie crumbles instead of pork will it stay together? My family eating less meat these days and I’d love to make this for them.

    They look like hamburgers. All you need is buns and some lettuce and tomatoes.
