    I've recently discovered Hachioji's omakase course in Crows Nest. The chef (Benson) is one of Australia's most creative sushi chefs. He is very clever with his flavor combinations. He makes sushi an exciting experience!

    Aaaarrgghhhh!!! This video is a real torture. I love so much sushis and it's been months since I ate good sushis sushis 🍣😭!!!
    Sitting at the counter is the best to me. This makes the whole experience so much more enjoyable and if you get a good sushi chef who is willing to explain the characteristics of each piece, you learn a lot and appreciate even more what you taste. One time in Japan, the sushi chef who was a senior and experienced chef told us that he is preparing the same piece of sushi differently for a woman and a man because we do not taste exactly the same!

    Nice video again, Janice! You’re going a bit bougie now 😆 btw, Hachioji’s style is Fukuoka style sushi, but I reckon if you want the best sushi omakase in Sydney, you need to try Sokyo, Kuon and Sushi Oe!

    Omg looks good. I've been to omakase at sashimi shinsengumi in crows nest but it's really hard to get a booking

    Good job describing the dishes, not easy with fish especially. What's time span to devour all these delicate dishes ? At a reasonable pace to enjoy the meal I hope. True, another must try place.

      i really liked the oyster and also the mixed fish soup! that broth looked ordinary but was packed full of flavour

    . As a foreigner in Japan I was asked (politely) to cover up my tattoos in some establishments and was refused entry into every hot spa unless my tattoos were covered. So the chef is either Koean or Yakuza.

      Kisuke opted not to renew their lease during covid so this is an entirely new owner/chef with sushi focus (kisuke had great sushi but also a great range of other Japanese favourites)
