Kent buddy thanks for allowing me to sample your sweet heat. I must say its defiantly different with the notes of sweetness turning quickly into that heat. I'm gonna do a blackened Rib Eye after the Holiday so stay tuned for that. have a Merry Christmas and thanks for the help during the year.
I agree with the level of cooking. I actually cooked a soy marinated tuna steak tonight with teriyaki noodles. I cooked it rare for the first time and the cold texture didn't do it for me. Put it back in the pan for an extra minute and a half on each side and it was night and day how much more I enjoyed it. That being said I can eat a steak rare no problem, but with fish it just wasn't right for me. Everyone's different I guess! Keep up the good work mate.
Nice cook Tommy! I like how you used the flour with the rub! I just got some blackened rubs and knew I could learn something from you! Thanks for sharing!
I agree with you on the way you fix your tuna sir. I can eat sushi, I can eat steak medium rare, I've eaten ra deer meat, whatever the chefs call it, I know how to fix it but don't know name, If I want cold fish I'll eat sushi, but if I'm gonna fix a tuna steak myself, or ordering one, I want it with no cool pink center. Gordon Ramsey would have a damn conniption fit, ik ik, but everybody don't care for that. I've had people tell me I'm cooking my tuna or steak or whatever wrong before, and I tell them, I know how to cook anything you ask for, I'll serve it how ever you like, but I will not cook it how you like it for myself. I've tried all that stuff and half raw meat is not good to me. The deer carpaccio I've had was good for a snack, not a whole meal. The taretares I've had were ok. But its just not something I want for every meal. I dont want anything overcooked, but I don't want anything cool or cold in the middle, a hot exterior with cool or cold interior bite of anything is not at all appetizing to me. Everybody has there own ways and that's what makes the world go round. I guess that's why I'm more of a pork man myself. Most everybody wants there chops, ribs, whole hog, Boston butts, sausage, picnic shoulders so on and so forth cooked done.
Great Post Trey and I appreciate the time it took to write. In the 80s it was all about steak tar·tare which I loved. Now, not so much. You just can't trust the meat source anymore-/. Same with Tuna. If I'm getting it from the local market I'll be damn sure I'm gonna cook it and cook it some more-. lol
Yesterday I put Kent’s Sweet Heat on grilled Lamb chops and the flavor was out of this world! That tuna looked amazing. So what can’t you grill on a Blackstone? 😂
Awesome tuna Tommy and I know it was good with that sweet heat rub! Nice wild rice side and fresh tomatoes and onions. Merry Christmas to you and the family!
Its good stuff for sure-. different in that it offered a note of sweet. then BAM!!!! here comes the heat. im going to flash blacken a steak with that stuff. oh its gonna be perfect.
