  • Cheese Stuffed Mini Sweet Peppers
    Serves: 1
    1 Lean
    3 Greens
    3 Condiments
    4 oz. Softened Low Fat Cream Cheese (lean)
    7.2 oz. Already Cleaned Mini Sweet Peppers (3 greens)
    1 Tsp. Fresh Minced Garlic (1 cond)
    ¼ Tsp. Cayenne Pepper (1/2 cond)
    ¼ Tsp. Onion Powder (1/2 cond)
    ¼ Tsp. Black Pepper (1/2 cond)
    ½ Tsp. Parmesan Cheese (1/2 cond)
    Preheat oven to 350*
    Carefully cut the top of the peppers and with a small spoon clean out the seeds. Do not discard the tops.
    Measure the peppers once cleaned.
    In a bowl mix the rest of the ingredients. If mixture is too thick add 1 Tbsp. of water.
    With a small spoon stuff the peppers and place the top back on.
    Bake at 350* for 10-20 minutes or until cheese has melted. Enjoy!!!
    ***Cheese will be very hot, let them sit for a few minutes before biting into them.
