Use the blunt probe to monitor your temp I have the same inkbird and the blunt probe is meant to monitor the ambient temp and there is a difference in the reading when you use the blunt instead of the pointed

It's basically a heat deflector. It helps to keep the meat at the bottom of the grill cooking at the same rate as the meat on top. Char-Griller sells them on their website for pretty cheap or you might be able to find them at Lowes, that's where I bought my grill. Hope you find a good solution!!

That hard fat is the tallow. If you render it you will get a shelf stable fat that is great for deep frying.
