I honestly love seeing chefs around the world try out new and exciting ways to make a transformative dish like the peking duck but instead of using rice paper he uses a flavoured 割包 which is also an taiwanese soft bread for braised pork! Its smart since the duck he slow cooked must be storing a hugeeee amount of juices damn! The pineapple shawarma sounds cool as heck as a dessert. A bit sacrilegious to middle eastern food but hey! Food needs to take new form to evolve! Kudos and hope Demon Duck comes in to southeast asia one day!
I would love to try some Demon Duck...I'm a traditionalist and like the pancake, but based on Chef Leung's suggestion and reason behind the bun, I would try that for sure!

As a hotelier I know, NO REGULAR BARTENDER WILL SERVE A UA-camR OR ANY INFLUENCER, just to get a promotion they use Head bartenders......it's not right I think it should be as normal as a normal guy/girl who walks in to have a great time..... Hide the camera and see how they act.....that will be more realistic....trust me, it won't be the same 😇

I wonder why 21 days, usually beef is recommended at 28-30 days. Im curious if 21 is the equivalent.
I guess its probably the fat content/more moisture in the beef that allows for the longer dry age.
