Dough starter (面种):
100g (3/4 cup) plain flour (普通面粉)
1 tsp caster sugar (细砂糖)
1 tsp instant yeast (即溶干酵母)
150ml water (水)
Ingredients (材料):
300g (2 1/3 cups) plain flour (普通面粉)
110g (1/2 cup) caster sugar (细砂糖)
1 tsp salt (盐)
1/2 tsp baking powder (发粉)
1/2 tsp baking soda (苏打粉)
1/4 tsp alkaline water (碱水)
140ml water(水)
1 tbsp cooking oil (油)
400g red bean paste (豆沙馅)

Thank You For The Receipe The Dough Was Fantastic. I make my red bean paste myself but its was to soft due to too much water so it became very messy. Word of advice if its too soft wrap it individually.
Just fry the paste a bit longer if its too moist.

Texture will be different without alkaline water because it allows the pastry to be chewy, you can find it in Chinese grocery store

@@kennethttk in Malaysia it's also known as air kapur made using kapur makan aka kapur sirih. Kapur makan/sirih is cheaply sold in small jars in grocery shops or small amounts in sachets at regular pasar. You only need a tiny amount, about quarter to half teaspoon diluted with a few tablespoons of water. Then let the silt settle and only use the water. It irreplaceably makes soft and chewy kueh texture. You can omit but won't get the texture you're used to with store-bought kuehs.
@@Corachel I believe in western countries its also known as food grade lye water or potash. Should be rather easy to find in baking supply shops since they're often used to make pretzels and bagels. If using lye water, read the labels and use it carefully.
