    I think some people are confused here when Vito is using the term "Nervous"". So let me explain here.
    What Vito is using is basically an Italian expression. When we say (in Italy) the dough is "(too) nervous" it means that the gluten has developed in such a way that the dough becomes too elastic, rubbery and with too much "spring back".
    This is how it should be after the FIRST kneading, because it's when you want to actually develop the gluten using mechanical force. Indeed the "press to see if it springs back" is the most basic test that you can do to see if you kneaded enough to develop the gluten.
    However, this spring back very bad during the "shaping phase", when you are trying to shape your pizza (or focaccia or bread or whatever).
    In this state the final product not only will be almost impossible to shape correctly, but it will also be much harder after cooking it. In stead of being "crunchy on the outside and soft on the inside", it will be too crunchy and chewy, due to the way the gluten will bind in the presence of heat. This makes for a bad product that feels like eating gum and not pizza (or focaccia or bread).
    Hence after the Tasty lady had kneaded the dough, she should have let it rest for at least 1 hour, which would make the dough much more
    malleable and softer.

    Vito. These videos help us to learn the mistakes. Also watching so many different videos brought me to your channel. The best thing I’ve learned from practice is patience. Let the dough rest and rise well. Plan ahead so the dough can grow with flavor. I’ve used dough same day up to five days. The dough flavor changes. Thank you Vito for your wonderful work.     I genuinely appreciate these types of comparative and analytical videos, Vito. I think it gives your viewers more insight on what methods to avoid and also what methods to use, if they want to achieve one specific style of pizza versus another style of pizza. While I saw that you replied to another viewer that you won't be doing any more 'react' videos, I hope you change your mind and do make more........ it's valuable!

    Ciao Vito. Well I really like this "Pizza Chef Reacts to..."-Format. First: It's useful because of the constructive criticism you (and your sister) give. I don't like offending someone (which can be seen in lot of UA-cam-Clips these days) but constructive criticism makes everyone better; it helps avoiding mistakes and minimizes the chance of being frustrated from bad results. Second: This Format is also Entertaining. Growing up with Italian Kids in the Neighbourhood helped me understanding & loving Italian Bodylanguage (well - and of course absolutely L-O-V-I-N-G Italian food in general).     Don't know what your sister is saying but love her reactions. I am a third generation chef and I feel your pain when people don't pay respect to the gastronomy of your culture. I've made your dough and it's the best pizza I've ever eaten. There's a pizzeria in my home town that is actually using your dough recipe. I went up to the owner and confronted her about it, and she said. " don't tell anyone " lol 😆

    Hey Vito, I'll say it once again so you can try this out. If you put a pizza stone like 5-6 cms under the heater and leave the door slightly open to trick the thermostat, so the heater remains red - this way the regular oven will behave almost like EffeUno. You won't need to precook the pizza with sauce only. It usually takes me like 80-120 seconds for the pizza to be done, with no single burn on mozzarella :)

      Be very careful with this, and preheat your stone first. Heating your stone too quickly can cause it to break. Turn it up slowly over an hour or more.

      Good Idea, I will try it next time. It is problem by my oven 250 degrees is max out. I do use to coock pizza on the bottom of the oven on aluminium foil it is great. I need only 5 minutes to coock pizza.

    I'm so glad I learned from Vito and didn't watch too many other videos,. Pizza dough is like a feeling of softness and delicacy it shouldn't feel stressed should fell almost soft like a delicate marshmallow handle her with care!

      I can so relate. I was watching Pro Home Cooks make pizza and then he paid Vito to come to his home and they did a video together. So I watched that video and came directly to Vito's channel. I guess that is a good thing. Not a good thing to pick up bad habits from other channels.

    Be clear out there… he is not criticizing, he is critiquing. It is the small mistakes that make the Biggest difference to your finished product! He is a master and a kind and sensitive and passionate man. He is NOT willing to play small! He is a teacher, an Alchemist and he has balls because he is not going to sell us out.     I've seen dozens of pizza making videos over the years and can't even remember which one was the first that got me started or which one convinced me to get a Pizza stone and led to me watching even more videos until I've finally got close enough to the taste of my local pizza places however I've never seen these most viewed videos. All I do remember is that I became interested in making certain franchise burgers myself and a couple months later I'm making Pizza with my own dough and looking up new recipes even years later just to always see wether I can't get even closer to that stone oven taste without owning a stone oven

    I have made pizza only 3 times by myself and I used Tasty's video tutorial reviewed in this video. I had the same problem of elastic dough which was regaining its shape like a rubber band and was not able to stretch it properly like restaurants. It was also extra crunch and not a chewy crust.

    +1 Great Video, Vito. * You're right: No Sugar in the Dough, if you do it the Tarditional Way but Tasty uses it the faster the Fernentation. This Trick only works, when the Ammount of Sugar is only so small that the Yeast uses it up completely. Otherwise you would have a Taste of Sugar that you don't want. Those Tricks work well but I still prefer the Traditional Way. I have the Time to wait. I'm also not sure about the Structure of the Dough, when you use the faster Method. My Experiance was, that the Dough almost had the same Structure but the Yeast produzed more Holes in the Dough because of the fast Fermentation. It depends on you wether you prefer.

    I started making pizza at home using the Tasty video. I followed her instructions step by step a few times and the pizza was ok but once I got to Vito's recipe, i never went back to the Tasty version. In her version my dough would become 3 or 4 times its size in like 6 hours. I think she uses too much yeast in her recipe that's why her own dough became too elastic like rubber band (over-proofen)

    When I saw the burnt cheese, I think I started speaking Italian. I got to spend a month in Naples and Sicily-pre covid, I could eat pizza every day. Until you have had a real pizza it is hard to explain. I would go back to Italy just to eat pizza. Hoping to become a pizza master. Love the videos Vito

    Good video brother. I agree she did not a bad job but I always believe if you are going to teach people how to do things then do It right. There is no in between. It's either the right way or the wrong way that's it. So Thank you as always for showing us the correct way. I have done all your recipes Vito that i see on You Tube and I tell you they have always worked. I never have any problems with your recipes. That's why your the best pizzaiolo for me.

    After watching so many pizza videos from the real pizzaiolis like Vito, and actually trying to make pizza prior to that, I can attest SHE LITERALLY MADE SO MANY NEWBIE MISTAKES LIKE ME IN THIS VIDEO. I was jumping up and down exactly like Vito and his guest... "I MADE THE SAME MISTAKE BEFORE 😲😲😲!" I wanted to punch the screen... just crying inside. This was definitely not the best video by a long shot. Guys, just watch as many videos from authentic pizzaiolis like Vito and try it out. I just don't people make my mistakes shown in her video and be disappointed and give up. It breaks my heart how badly she was informing her viewers.

      I'm a new pizza maker and am glad I came to the right place. I usually watch homesteading channels and that is how upset I get when I see what people do WRONG in animal husbandry.
