I'm sorry, I had to drink a glass of water just to do a spit take when Ramsey mentioned "rosemary"...wtf was he smoking? Rosemary on a pizza? The whole video is disqualified by that insanity.
I like that their behaviour/attitude is different: the combination of Lucio's calm and rational commentary and Vincenzo's energy and tendence to be a little more critical is perfect!
An expert who's very gracious to others in his field. Very enjoyable to view. I just loved the generous responses to the first cook -- made me smile for ages.

Otherwise its not a traditional Margherita Pizza and you'd have to name it otherwise, e.g. if you go into the supermarket to buy Mozarella and get Gouda you'd be pissed because cheese is not all the same. What I noticed was that their criticism is always about the combination of the name and how those videos prepare the food, not about that the techniques are fundamentally wrong. They are just wrong for this particular dish.

Gennaro is an amazing chef and I think he did a good job with his pizza, although I also think that garlic in the tomato sauce is not matching, but hey nothing wrong if it's something you like.
I never understood why pizzeria dough tasted so much better than what i made at home until i learned to use a small amount of yeast and let it proof for at least 8 hours

Hey Vincenzo a lot of ppl using sugar to help boost yeast, we do it in our traditional family always .. you put yeast in lukewarm milk with pinch of sugar and let it rise (foam) then your yeast is activated .
I freeze them after the 24 hours fermentation and put in a ziplock bag. I defrost from the morning. When theh are defrost I re-do the ball and let it rest for about 4 hours in a sealed pizza tray. After these 4 hours I make the pizza. This is my homemade method

What makes the different between small amount of yeast with long time fermentation and large amount of yeast with short time fermentation???
pizza with little yeast and long fermentation times are much lighter and easier to digest
