- Focaccia is one of the simplest and fastest leavened products to bake, even at home, and still mistakes are always around the corner... Not only for amateurs! From the use of salt to the thickness of the dough, from the oven to the use of olive oil, it takes very little to transform our traditional leavened product into a real disaster. In the homeland of focaccia, together with three very Genoese professionals, we plumbed the most popular focaccias on the web searching for the formula for the perfect focaccia... We can all agree on 2 things: Jamie Oliver cannot make egg fried rice, and Gordon Ramsay can’t make Italian food
But I wonder why he doesn't even bother to check with a chef from Liguria or an italian cookbook before making his videos. That is a form of disrespect towards the dish and the people who watch his videos.

Indeed. But we also should consider that when a recipe travels outside its original place may suffer changes. A recipe will always be adapted depending on the ingredients found and even people's taste. I think that is the beauty of cooking. Original or classic recipes will always be respected and honored but cooking as the World itself is in constant change.
This is one of only a few non-English channels I'm subscribed to. Granted, the few that I am subscribed to all have English subtitles. But I just wanted to mention that because I think this is a very special channel. Thank you for making such wonderful content.

Just because my 3 hometown brilliant and generous chefs gave him some sort of a pass doesn't indicate he can make focaccia Genovese! He made a mess like the rest of these clowns that are jack of all trades & masters of none!!

I also love how they appreciate new techniques and how they give constructive criticism to the videos they like. You learn a lot. "To throw something at someone" is something more of a dialect common saying.
Like if you come to visit me with a bad wine as a gift, in Liguria we use to think "i'll throw it back at him".

It took me a while to realize that being a multiple time Michelin star winner, doesn't mean you can cook every dish in the world to perfection.
Gordon is "merely" elite when it comes to French style cuisine.
Ramsay has never understood anything about italian cuisine. Probably he cannot even write the word "Italy".
Un veloce riassunto storico: la focaccia nasce con l'impero romano dal termine focus (fuoco) e l'impero romano andava a Mediolanum a Drepanum quindi la focaccia c'è in tutta Italia: in Emilia-Romagna si chiama spianata, nelle Marche cacciannanze, in Abruzzo scima, in Toscana schiacciata, in Piemonte sono dolci e poi c'è la focaccia barese con pomodorini e olive e la pitta calabrese
A Roma, che ha fato i natali alla focaccia, si è trasformata nella "pizza bianca romana" ma è proprio lei, la focaccia. Sicuramente quella genovese è la più famosa al mondo ed è più antica di altri, specialmente quella barese che, visto anche l'uso dei pomodori in Italia solo nel 1650, non è più vecchia del 1800 a differenza di quella genovese che esisteva già nel 1200.
Detto questo anche se gli chef del video sono liguri, sono perfettamente in grado di giudicare anche una focaccia barese in quanto ha certe caratteristiche tipiche che ogni focaccia deve avere (alveolatura, impasto appiccicoso, colore, cottura interna, spessore...) e hanno giustamente bocciato la prima focaccia di Gordon che era un pane alto e crudo dentro e non aveva niente a che fare ne con la focaccia genovese ne con la focaccia barese.
Finalmente un commento sensato
L'uso ottocentesco dei pomodori non implica che la focaccia barese non sia assai più antica.
Quella genovese è attestata nei documenti dal 1200, però bisogna verificare i manoscritti pugliesi per risalire a quando è stata attestata storicamente la prima volta a Bari...
Beh comunque i giudici sono tutti liguri... niente da togliere alla focaccia ligure però, come dicono anche loro, non esiste solo quella...

Da salentino vi posso assicurare che quella di Gordon non è una focaccia alta tipo barese, ma semplicemente troppo impasto in una piccola teglia che è rimasto crudo nel mezzo anche dopo la cottura.
La foccaccia barese è molto 'bollata' nel mezzo, questo perché l'impasto prima di essere infornato ha il tempo di riposare bene, e in stesura si cerca volontariamente di far incorporare aria all'impasto.
Altrimenti risulterebbe non digeribile, come sicuramente è quella di Gordon 😅

I lived in Rome for quite some time. I can say that the Romans were regularly appalled at me dunking my focaccia in my coffee. They seriously yelled at me in the cafes.

Anzi aggiungo che nel 2019 Fico Eatalyworld, il parco tematico di Bologna dedicato al settore agroalimentare e alla gastronomia, ha proposto una sfida tra le 2 di fronte ad una giuria di 100 persone qualificate e la focaccia Barese ha vinto a mani basse...

La parola focaccia ha significati diversi in parti diverse dell'Italia, per esempio la focaccia di Ramsay assomiglia un po' alla focaccia messinese che e' spessa ed ha pomodori e acciughe sulla sulla superfice. La focaccia di Bari e' diversa da quella messinese e da quella di Recco, ma e' sempre focaccia. In altre parole citta' italiana che vai focaccia che trovi.

Thank you Italians for keeping the food simple and deliciously tasty. However, recently been in Italy and it's declining. First time in my life an Italian chef couldn't make a good pasta and it costs us 100€ for the white truffle. It was a hotel restaurant on top of a mountain where there is nothing else. The next day we had to eat outside. Few trattoria were good comparing to past years, that's the Venice areas. I hope Rome hasn't changed, the best place to eat.
I am italian in the venetian region. The best places to eat local foods is outside the cities. U have to go outside. And search for trattorie, the smallest as possible. If I eat in cities I try to go slightly outside the center.
@@VirginiaCOur hotel was michelangelo in vicenza, it's very high and I'm afraid of heights. We weren't planning to go down in the city but to spend a quiet moment in the nature and quiet place. I agree, that's what we ended up doing; went down to find a good delicious food in a trattoria. We also discovered in the supermarket "Merluzzo veneziano". It's so delicious.
The tourist areas of Venice have some appalling food, but once you get out of there thethe local places are full of great food.

I always proof my foccacia dough for 24-48 hours in the fridge. It’s a slow proof, It’s always more bubbly. Make sure it’s 70% hydration.
The good story of fishermen eating focaccia and drinking wine while at sea is what Italian tradition should be about, not some prescribed rules and high-end restaurants.

Ramsay is terrible with Italian cuisine, I never saw a single video where he does a legit Italian recipe. He probably can do it right, he is indeed a great chef but he’s also a showman. His “Italian” dishes are made to be more appealing and familiar to an American or English audience.

You can say it just by looking at the final result. As the old chef said it came out basically a bread stuffed with toppings. Doesn't look like traditional focaccia

Vorrei farvi i complimenti perché siete riusciti ad esprimere critiche ragionate senza scadere nell'insulto. Io odio quando vengono fatte critiche al cibo che contengono frasi come "non lo do neanche al cane" o "lo butto nel cesso" o gente che sputa il cibo dalla bocca. Per quanto non sia mai perfetto è difficile che un cibo sia così disgustoso da meritarsi questi epiteti, e nella mia educazione il cibo, anche se non buonissimo, è comunque sacro e non va sprecato.
In the US (and UK, as far as I know) focaccia is just "a beginner bread", not its own particular thing to excel at. We don't have the tradition or the knowledge to understand it. But just as bread making has gotten a lot more respect recently, I'm hoping that things like focaccia eventually get more respect as well.

La cosa che mi fa incazzare dei commenti sono i presuntuosetti che dicono che questi non possono criticare ramsay perchè é uno chef stellato...é per caso un dio? No, é una persona, e fa cazzate come altri, tra l'altro per avere delle stelle michelin non ti chiedono di saper fare tutte le cucine del mondo, ma ti chiedono creatività in un piatto tuo, tra l'altro gordon è di scuola francese e tradizionale inglese, dove i primi hanno una cucina basata su tecnicismi e presentazione del piatto, non tanto sul sapore o qualità ( per intenderci per loro é importante che sai distinguere una mirepoix da una brunoise), e la seconda... beh, lascia il tempo che trova, gli inglesi non sono molto riconosciuti per la loro cucina tradizionale. Fatto sta che gordon, di cucina italiana, non ne azzecca una e non gli interessa nemmeno azzeccarla.

Il problema della cucina italiana è fondamentalmente quella di non aver mai "ufficializzato" le proprie ricette. I francesi lo hanno fatto, mentre noi andiamo avanti da secoli con le ricette tramandate quasi esclusivamente a voce. Diventa quindi naturale che, con in più le enormi differenze regionali che abbiamo, ognuno finisce per fare un po' come cacchio gli pare. In generale gli stranieri si sentono giustificati a cambiare le ricette originali, perché in fondo lo facciamo tutti, italiani compresi. Verba volant, scripta manent.
l'ho notato anche sulla cucina italiana; può essere una cucina raffinata, ma non ha eroi come Careme o Escoffier. In America, però, noi buongustai siamo a conoscenza di gruppi come La Vera Pizza Napoletana
I francesi hanno ufficializzato molte ricette di altri: canard, besciamella, genoise, zuppa di cipolle, babá...la lista é linga

This is just a wonderful video. Ramsay’s Foccacia looked tasteless, heavy and insipid, as they say. He can do better! All the other comments were so valuable, but I would like to see their versions of Foccacia - please.
What are the qualities of a traditional focaccia in Italy? What's the color of the surface? Is it soft or crispy? How thick is it? How big are the bubbles inside? Is it chewy?
I think a major part of the disconnect between non-Italian and Italian recipes is that the desired outcome might be different. As an American, I don't know if I've ever had a "true" focaccia by Italian standards. The Alfredo video on Italia Squisita opened my eyes to the sharp contrast that can exist sometimes between the original and the local.
But dipping bread with onions into coffee? Did I understand that correctly? I don't think I'm ready for that experience.
Here in Genoa, we dip the classic focaccia into the cappuccino, but sometimes, especially when the onions are really crispy, we dip even the onions version.
Focaccia with cipolle and coffee/cappuccino is one of the greatest reasons why my region is amazing

Well thats raw bread that he calls "focaccia"
No, that bread was undercooked. This is a mistake not a twist. And It doesn't even resemble a focaccia on the inside tbh, it's more like a generic bread.
Dough was far too tough(low water), and sadly underbaked, not to mention everything else the chefs had commented on. Gotdon could have done another take to get it right, but decided that what he made was good enough.

@@jaclynstepnowski9649 America is full of people who do great cooking and preserve tradition, it's also a different culture, American plates are super rich and so they look less refined but it's a matter of culture, and there are a ton of cultures in America.
Also, don't think that italy is the perfect land of tradition, this channel shows you some of the best chefs but you can find plenty of places that do italian food worse than some places in the US. These are also local recipes but eating them outside of their region of origin is a completely different deal...
As for my personal experience, I do feel like you can generally have better luck with food in italy than by picking a random restaurant in the US but that's just a feeling.
