When I was a child, my mother always made fried potatoes with onions in her cast iron skillet. It was a ritual, peeling them, slicing them, cooking on the old Coleman gas stove. When I do it now, the smell sends me right back to my childhood camping, the canvas tent with the center pole, the wood and canvas cots, the kerosene lamp, hiking in the dark to the pit toilet. Things have improved since then in terms of equipment and comfort, but those potatoes are still the best part.
I love potatoes all ways for camping…..I peel, cube potato’s chop peppers and onions and place in the microwave at home and cook till potatoes are almost done…cool and place in prepped foil packets like you do. I buy meatballs frozen and brown them at home then package in foil pack…..I make my own pasta sauce or cheese sauce and vac seal them in to go bags….so all I have to do is put the bag in very warm water to heat , the packets of meatballs and potatoes go on the fire then pour over sauce of choice on each…..and it makes a great meal

Yummy. Zatarain’s is the best. A tip: when you finish chopping stuff, use the dull side of your knife to dump into the bowl or whatever. It spares the edge and keeps it sharper longer.

My husband and I really look forward to camping every late spring through at least early October (weather and temps permiting) .We have ideas of travel camping with our motorcycle and a timeout any ideas would be appreciated. Love your camping videos!

I do the same zatarains jambalaya trick only I use can chicken , andouille, can chicken stock and the Dutch oven, the original set it and forget it appliance

(instead of my usual hot italian sausage pasta) Planning to try it in the Fall....Also intrigued by your camping desserts! Thanks for sharing!
We use the Jambalaya mix and cook all kinds of meat in it (no beef). We'll sometimes have 1 odd chicken breast left over from a package. Maybe a pork chop, sauisage and other single servings of meat. I chop it all up with the same ingredients you use. Plus I add shrimp. Five quarts lasts only three days, not enough time to spoil. It does freeze well if I get the chance.
I would love to see more videos on what you eat while hiking a short or long trails. Also would love to see how you pack all your meals for camping and just overall more camping and hiking videos and tips. I love your contact.

Love that rice dish, one of my go to when camping….question why does everyone ground the coffee beans does it make that much of a difference in coffee taste vs. bring pre ground? Seems like more equipment and steps, but everyone seems to do it camping.
The main reason I grind the coffee beans at camp is that we have a coffee grinder at home, so we only buy whole coffee beans. I think grinding them right before you make coffee supposedly gives you a fresher more flavorful cup of coffee, but I'm really not sure I would notice a difference in a blind taste test.
My fiancé and I are going to be living out of a micro camper and traveling the country for the next year and we LOVE your videos and learn so much from you. So thank you! I do have a question that I’m hoping you can help with! We have only camped once before and it was in Florida, so we didn’t really have to think about bears. We have never even been to the west coast so we don’t know what bear country is like. My question is, when you’re in bear country do you still cook at your campsite or do you actually move everything hundreds of feet away to camp and eat? Thank you so much!!!

Amanda, I need your advise. I have been camping, hunting, fishing, hiking for almost 40 years here in the PNW. My kids have never had the interest that I have had. Amazingly, my son came to me and said that he wants to go camping and hunting small game. Now, I am of course excited to hear this. I don't want to go overboard. How do I ease him into this? What fun meals, activities, or ideas should I present to him to keep him interested without going crazy and pushing him out if nature? Now I know that is a ridiculous question. But, plz. Any advice would be greatly appreciated.

I use my cast iron pan every day so it's just built up such a good seasoning. I also rarely clean it unless I cook something that is stuck to the pan or has a strong flavor like bacon or salmon.

That’s seriously the best salt. My grocery store stopped carrying so I switched thinking I wouldn’t notice a difference. Wrong! Now I buy the kosher style in a bucket. 😆

Everything looks great, only thing I would have done different was to fry up some bacon first then cook the potatoes in the bacon grease.

Luckily, it's mined right here in Utah, so I can easily buy it! I even put it in my water now to help me stay hydrated.

Ugh! I got a cast iron griddle and I'm totally regretting it. Should have gone with the skillet. I can't get the griddle clean for anything.
.. just clean it extra bare and season it in the oven ... after a few uses with oils ,it will be non stick .... remember never use soap ....
Flip it over the fire and burn it out. Then season again
