Have tried most of the mentioned versions of the original dish. And they all are great !!
I was taught by my Italian housemate, Dario, years ago how to make proper carbonara. Unsurprisingly, it’s almost identical to Antonio’s and Jamie’s method…..never, ever add cream or you will be banned from cooking Italian food! The egg yolk is the cream!

There is absolutely nothing about carbonara that needs to be "hacked". It is a perfect creation in & of itself.

This was a good mix of traditional recipes and non-traditional. I enjoyed watching the different methods, I've been making traditional carbonara for years (and criticising Italian restaurants who use cream!) but it's nice to get a few variations.

Why do people like to say 'classic' and then put random stuff in the recipe? Even these Italian guys didn't do it right...either not using Guanciale or not using Peccorino while showing it on the bench :)

Be honest, you made that compilation to trigger the Italians. Next compilation will be "Italians Bad Words Megamix | Jamie Oliver". One claims "Traditional Carbonana" and he puts Olive Oil in the pan. Another one claims "Traditional Carbonara" and he puts a huge piece of butter in the pan. Yours are clearly interpretation of the carbonara with asparagus or mushroom. On the other hand the cake is a "porcheria" but for the tastes and for the colors there are no discussions...

@@jennieoh8543 spaghetti supposedly al dente + 35mn oven (over) cooking... In cuisine, taste is above look. But when there is taste and look, you are a chef. We agree, this carbo cake is of great look. But then, the texture... 30mn oven with al dente pasta ??? This is all about Jamie...
What's the problem with him experimenting with stuff like this? He's not saying it's the original and you're not being forced to make it. Stop being a food snob
@@TheMcpro50It's not about experimenting in your kitchen lab , away from camera, it's about credibilty as a chef, in front of a camera. And educate people. And if you think cuisine is about "stuff", well...

His aims as a chef are to get more people cooking and to get people enjoying cooking - putting twists on existing recipes does that. He's also not a Michelin starred chef so I doubt he cares about your views on his cooking integrity. Again, no one is making you make these - you can just ignore
