    Times have changed! I had to laugh when she presented it as a "budget" cut. Now everyone wants it. But hers is still the best ossobuco recipe I've ever made. I highly recommend it.

      Veal shank used to be very cheap. It has become insanely expensive for some reason. It is like $9 a pound where I get it, so I hardly ever make this. Ox tails will also work. But the classic citrus flavoring is great. Not everyone likes it though. Feedback I got from someone when I made it was that it tasted like a air freshener.

      I'm sure once people became aware of ossobuco, meat producers realized they could charge top dollar for what's otherwise a cheap cut. Price gouging, nothing else.

      It’s more commonly made with beef shanks in US now, as there’s widespread opposition to eating veal. And beef shanks are inexpensive-I got some recently for $8/lb.

    She's amazing. Teaching about meat / butchering, cooking technique, and kitchen equipment all in under 30 minutes in one take.

    I made this tonight and wow was it good. I made it with beef shanks instead of veal. The subtle notes of orange and lemon is definitely a game changer. The leftovers will taste even better tomorrow!

      It is, it is! These days, I'd say it's an "occasion" dish. But well worth the effort and expense!

      My mother, who was from Britain, cooked it with oxtails all the time. 😋

      @@Tiger-Heart Oxtails will take a LOT longer to cook.
      Probably 8 hrs., unless you have a pressure cooker, which is the best way IMO.
      If you have a chance to pick up an old "Presto" pressure cooker, they are fantastic, and you can still get parts/new rubber seal etc from Presto.

    I thought veal...well that's not really applicable now, but blimey... again... non stop tips , all done with humility . Not one word wasted. Respect.

    I learn more from one Julia Child video than from the entire repertoire of every other celebrity chef. Maybe with the single exception of Keith Floyd.

    I've done this similarly with veal, beef, and lamb. I like to top it with a fresh gremolata that makes it pop with freshness.

    Curious why she picked an Italian dish. Was she running out of French things to do by the time she got to season six?

      She mentions there's a French version and that is the version she actually does in the video, Ossobuco is easier to say and more popularly known, so they used the name for the episode.

    All meat is terribly expensive these days, and especially veal, which a lot of folks don’t want to use because we now know how they treat the calves to get them fattened. Has anyone made this with a meat other than veal? This recipe looks and sounds so good. She was such an inspiration!

      You can use beef shank or oxtails to do it (beef shank will take a little longer to cook).
