If cleaned and seasoned well, leg of lamb can be delicious. My grandfather taught me how to choose, cleanand prepare a leg of lamb. He always bought no bigger than. A five or six pound leg of lamb. He would soak it over night. It was delicious. Sadly I'm the only one who loved it as much as he did. I love lamb chops. Usually they be cleaned all i have to do is wash trim and prepare them. My grandfather was in the army, lived in New York. He learned a lot from the best chefs there. I miss my grandfather, but cherish what he taught me. Other chefs did not share her opinion and Kamman is now only remembered for her professional jealously of Child. One of Kamman's supporters, Regina Schrambling, wrote an opinon piece stating not to buy Mastering the Art of French Cooking stating that American has moved onto people like Rachel Ray (any one making this claim has no credibility). These opinions are in the minority and are not shared by most in the field or those of us who love to cook. There is a reason that Child's Kitchen is in the Smithsonian, her books still used and studied as the Gold Standards, and her few distractors will be know only for being her distractors...not for any special talent that they claim to have had.

And even Rachel Ray has said she looks up to Julia. Mrs. Child was the right person at the right time and deserves credit for bringing back good home cooking when convenience foods and mixes were dominant and people were starting to take an interest in REAL cooking again. As for the Kamman feud...Julia was very dignified throughout, never openly attacking her, but never speaking her name or going to her restaurant.
