I think its referring to the bun that they use fingers to open and squeeze in fillings. Also chicken floss where they hold the bun and spread mayo and dip floss
Mask yes, but gloves for making bread especially for preparing the dough is a big no. You definitely never making bread before, but you research again about that. So if you use gloves while making the dough, it will stick. You can search any videos about making dough, no one uses glove
