For those wondering about “why drain it of water just to add it back in?,” they do that so that they can get the correct measurements of water to rice flour. In the beginning, they mill it with water and that water isn’t the amount they actually want, so they then drain it, measure how much flour they need for a recipe, then add a precise amount of water to match the recipe.
Why can't they mill the dry rice and make rice flour and measure it and add water for preparation?

Okay you have got to wash down the shelving you press those bags on after each use and again before use. All those flying bugs around there drawn to that area have been all over the shelving and are still in the area. Also…put some sort of low rolling pallet system on the ground to put all your buckets and such on. Do not place your food buckets on the floor. The only thing on the floor should be your feet. I don’t think you’re dirty workers, but you must maintain a very high standard in a commercial kitchen area.
I can't believe they put those filthy gas tanks on top of the glutinous rice to press out the water. I'm sure there's proper equipment available to do this task.

Wow. Put board below gas tank for show only. At 4:40, there were no planks below the gas tanks! Going to get a visit from the health inspector.
I like their almond flavour one, lots of texture and aromatic. Red bean flavour is very dense. Overall taste and consistency are mildly sweeten, light, solid, authentic (meaning very cantonese...)!

Well done preserving some traditional desserts. There are some concerns about the utensils used to prepare and it will certainly be a good to review and upgrade certain aspects of the food preparation practice. Looking forward to try on my next KL visit

Saw a lot of plastic pails being used to store food ingredients during the process. I hope they are compatible for food ingredients storage and not leaking any plastic components like phthalates, DEHP, etc which are harmful and cancerous.

Thats true. There 's rust on the propane gas tank. Proper handling of food and food safety.
Was thinking it was actually a good way of multifunctioning the propane gas barrels. Do not worry, they are cooking that pressed rice flour again. Although, if there is a chance to use some marble stones as weighing stone, it will be considered cleaner. Wish the workers use lumbar health belts/healthy corsets, wrist bands or so, to strengthen the muscles while working. So that everyone will enjoy their senior age conveniently. Wholesome cakes!!

Other than the gas presses are filthy and touching outside of the bags, other than that every tools are pretty clean. They barely touching the ingredients with their hands. Just pouring one to another.

Thereafter squeezing the residue water to get the pure rice pound.
That would serve as a base to the various Dessert. That's when you see them adding flavors, flour & sugar 😋 😜

Yes, in Hong Kong the 师傅 retired and pass on the business to his 徒弟,the owner that you see at the end of the video, he is the 徒弟。
@@So_Yummie : It is very rude of the guy to take over his Master's business, and also not to stay in HK as well... and to export that into Malaysia. Extremely rude, imho.... Even disobedient as well, if anything. "Passed it onto"..... What a joke. Cos if you respected your sifu, then there are certain actions that you don't take. But obviously he has left... Absolutely rubbish.. and that is why even his Masters, doesn't want to get involved. As you could see. What does "pass on" mean ? You stay and guard your store. This is genuinely what people classify as "traitor"....
Packaging looks good but the hygiene process in making the products must be improve. Especially don't put the gas cylinders on top of the ingredients. Floor is wet and not clean many small insects flying around. Owner must find other solutions to dry the ingredients. Just a feedback if they want improvement .

Report it. And then let the store be moved back to HK. And let his Sifu recover and recooperate instead. In the UK here.. if you report a Malaysian store... of anything, normally, they have corruption level so high that, the local police would come and visit you. And then, also... the "owners"... would find "somebody to trip you up"... It's like that. Some very very powerful people here. All the way, up to the government level... and all throughout Facebook, and they also dox your accounts as well.... It corrupts all the way into Germany too... with their analytics... (and into the church).... Oh, all Christian churches are also dominated by Malaysians as well.... lying through their teeth a lot of the times? And getting passports, and creaming and extorting money from other locals. (Skipping tax revenues...) AND they open casinos as well.... Gentings.. not even the UK ones, at all, going back to the public purses. Such a powerful clan...

If this place is so popular and well known why hasn’t management got the staff the proper equipment in the kitchen, to see the staff having to put empty gas bottles onto the shelf to squeeze water out is just ridiculous and totally unnecessary!! They should provide them with proper presses for goodness sake….I am also very surprised at how untidy the kitchen is….area where prep and cooking any food should be well organised and spotlessly clean……
