the bread sure looks delicious and i would love to taste it, but calling what the video showed amazing skill, not sure I would go so far, I'm sure it took some one a good amount of time and testing finding just the right recipe, but all they did here, was follow that recipe and let the machines do the rest, as most other bakers do, not saying it bad or anything, but there is a long way from this and too some one being truly amazing.
This was an absolutely wonderful way to make "puff pastry", letting them grow in a small mold so that they turn into a layered and buttered bread. I absolutely love this, I have a similar pan at home and will try to replicate this. Thanks for sharing
That's surprising. Usuallly we make laminated dough to achieve flaky overall texture, but they do it to distribute the butter more evenly with flakiness on the outside. Seems they use tangzhong method for the dough for cottony texture. It won't be like croissants or danish pastries, but something brioche-y, but instead with an evenly mixed fat, they use lots leaner dough, and the dough layers absorb the butter sheet later on. But I like my laminated pastries to be flaky 😁😁

Looks great, these guys are excellent at their craft, and i enjoy seeing the care and attention to detail. I wish I could work in such a bakery and learn the skills that these people have.
You don't have to work in a bakery to learn what you just saw. It's not some craft handed down from generation to generation, it's just puff pastry, made with machinery according to a normal recipe. Anybody could do it after 30 mins of instructions.
Hong Kong has almost the same thing since 5-60 years ago but they are rounded tube shape. We called them wheel bread because its looks. They are not found often now, it is too labor intensive.
대만 음식도 톡톡 튀는 창의력이 있고 신박하다. 대만으로 음식여행 한 번 가고 싶다는 생각이 들기에 충분해. 근데... 뭔가 아쉬워! 마무리 랄까? 고급스러움이 약간 부족하다고나 할까? 암튼 약간 투박해. 길거리 음식에서 엘레강스 한 것을 원할 순 없지만, 그래도 조금만 더 완성도를 높였으면 좋겠다 싶음.

每次看完日韓的再看台灣的,最大差異就是環境整潔跟器具選用讓人尷尬,台灣真的超愛用非烹飪用塑膠容器有臉盆、大型垃圾桶還有影片內這種裝雞蛋盒子,這就算了上面還髒髒的。
烤盤燒焦彎曲變形、機器上殘留一堆粉、發酵室烤箱都有久未清理的痕跡,沒有比較沒有傷害只希望台灣在食品衛生向日韓學習畢竟是吃到肚子裡的,現在拍台灣的美食製作影片越來越多就是上述看了讓人出戲

Pâte levée feuilletée comme pour la pâte à croissants ! 🥐 Same pastry as for French croissants. Original and it looks delicious !
