    Very nice system, good to see. Several comments don't know gloves not required as food is being cooked and also think this community group has to follow re-seller rules. I wish we had access to a kitchen like this near us! What a beautiful facility and how wonderful to support small farmers and home processors. Let's hope this infrastructure becomes available in more areas and more people develop the skill and knowledge. Thank You!

    I don't see anything wrong with their methods. They are basically using USDA home canning methods on a larger scale. I bet the food is really good.

      It appears to me that it's a steam unit - I expect they do a flash steam to loosen the skins for easy removal. At home, you blanch in boiling water to accomplish it.

      trial..and error..you are required to test the seals.....by dissecting the cans ..and measuring seam,,,seal..width..and height...by manufacturer..as well as documenting temp..before sealing...there is also an headspace required..if using cans...about an 1/4 inch...if using retorts....rules change with non commercial equipment....you are required to document test specimens...about every six hours of processing...but to be adamant within this business...rules change constantly...you pay attention...to changes...which are governed by state...here.

      now that is a good comment...the cost alone to run an retort and chain system is very high...the product can make or brake an farmer...

      @@dhamithruVLOGS there are a few...some steam cook before final sealing....some cook in the brine...my interests in using cans instead of jars all is about canning fish

    I noticed all the hate comments on this video about hair nets and gloves, one even commented on botulism. Everything is being sterilized in the steam cooking process. The important thing they are doing is making sure the product is cooked at the right time and pressure for the product. Im assuming this is for their personal community use, and that community has determined their practices are safe. I am more worried about the sausage tubes I buy at Walmart than buying their product.

    Guys make sure that the product is free from Clostridium botulinum, what may risk of botulism. Make sure that if your product PH is ≥4.6 then the F value should be ≥2.8 min.

      Yea and I bet they grew those vegetables in dirt that wasn't sterilized probably had ecoli and botchulism in it maybe even bugs. To think people have been processing food for 1000's of years without hair nets its amazing were still here.
