I don't get it
the next guy A spit is a metal rod you use to cook food over a fire. So spitroasting is cooking something on a spit. The other meaning which the joke refers to is a sexual act where a person takes it from both ends. In otherwords when you spitroast a pig you’re shoving the rod through the mouth and out the anus which is essentially what the sex act looks like.

I feel like the genius of this sketch is the fact that it does not simply assign a qualifier (Good/Bad/Pineapple) to the word "political correctness", but instead provides an extremely constructive criticism of it. This sketch illustrates the reality of political correctness as well as some of its pros and cons.
For the pros, it illustrates how "times are changing" and how we are progressing generally to be more tolerant as a society, raising the standard for what we tolerate as acceptable behavior in regard to how we talk of others.
For the cons, however, is the cold hard truth that simply blocking the speech does not make the beliefs go away. Even worse, and this is my interpolation, blocking the speech may mask and protect those with bigoted beliefs from ever receiving the criticism they deserve. By allowing them to remain bigoted in secret, we are merely hiding these people. We are not really becoming better as a society but are just moving the things we don't like from the public sphere to the private sphere.
That is my take on this. Really nice skit, a very good mix of satire and current events told in a very good tone. People on both sides enjoy this skit, which is a testament to a job well done.
