I was only cooking for two portions so messed up a bit reducing it, I used too much yogurt and despite your warning NOT enough mushrooms! Served it with left over rice stuffed spring greens rolls.

These are the same thing as baby bellas in the US. They are also almost the same thing as a white button mushroom, just brown. UK mushroom varietals often just have different names. When in doubt, just google “substitute for x”.
I thought chestnut = cremini. Cremini look like chestnut mushrooms in the photos to me anyway. Portobello mushrooms also work instead of chestnut if you can find them, but they're more pricy

I was wondering if it's worth using sliced canned mushrooms in brine, they would save a lot of cutting! The flavour might not be the same though. What do you think, ever tried or suggest trying?

I like to finely dice half the mushrooms for a quick fry off, makes a lovely sweet base and then chunkily slice the other half.
