    I think I have FINALLY discovered what I have been looking for. I have "binge watched" this channel now, and it is the BEST thing! My vegan diet has been lacking in discipline, but I reckon these easy to follow templates will tick all my boxes. Thank you Evita for making it simple and believable.

    I made. Delicious! I added vanilla powder, and some lemon juice to the filling. So incredible. I never knew what to do with that raw coconut butter.

      How lovely to hear! They are my favorite treats for birthdays because you can really feel like you are "treating" yourself and your body with healthful nutrients from whole foods - no refined flours or sugars or oils, no artifical colors or flavors, just real food :D

      I most recommend focusing on stainless steel, as it balances the best of all things considered: cheapest, safest, and easiest to work with.

    Thank you for such an awesome video! It is possible to use a Vitamix vice a food processor?

      You are very welcome, Kent. In general, you could use a Vitamix, especially for the filling, but it will be harder with the base crust, because it is so thick and sticky. You can definitely try though and see how it works out for you.

    Wow this is a great channel.In my country there is no coconut puree. Can I use coconut milk mixed with gelatine and if so how much shall I put? thanks

      You can make your own coconut puree. It is just dried coconut blended into a "butter" using a food processor (no water, no other ingredients). Otherwise, to substitute it, you should use soaked raw cashews, or a similar creamy raw nut, soaked. Coconut milk alone will not work, and gelatin is not a healthy or recommended ingredient.

    Can you use frozen fruit thawed if fresh is not available, and would amounts be the same?

      Hi Joe, no, frozen fruit will not be a suitable replacement for fresh fruit for these cakes, as frozen fruit will have too much water content (be soggy), and not allow the cake to set properly.

    I don't like coconut, will it taste like coconut when I use the coconut butter? And also, how do I do the soaked cashew replacement? :)

      No, it will not taste like coconut, especially with the cacao addition, but even if it is a plain fruit version. To use soaked cashews, simply place around 1 cup of dry cashews in a bowl of water for several hours, then drain the water, rinse well, and add to the food processor instead of the coconut butter.
