How to Measure Flour the Right Way

  • Knowing how to measure flour the right way is the key to baking all sorts of delicious things! So often when I get questions about things that went wrong with recipes it's the flour was not measured properly. Packing too much in can lead to bready, dense, crumbly baked goods. Not to mention lots of frustration and wasted ingredients! Let me know if you'd like to see more of these baking 101 videos!

      Lashlove16 Rose Levy Beranbaum and Alice Medrich have been recommending scales for years now, but few people listen. However, if you don’t want to buy kitchen scales, you could also sift your flour directly into the cup without tamping it down (just scrape the excess off).

      @@craz4jaymz Don't forget Liberia and Myanmar use imperial measurements as well. There are only 3 countries that still use it. It is starting to be used less in the U.S. in recent years. Mostly due to internet forcing conformity.

    You may have already thought of this but you could create a master class type of series with the basics of baking, etc. Your method of explanation and demonstration is simply the best. You are a wonderful teacher and have all the qualities of instruction that make the subject enjoyable - experience, creativity, humor, humility and kindness. The way you explain everything really helps the viewer understand. I just love your videos. 😊💜

    As a 9 year old in 4-H and then again in middle school home-ec this is something that was engrained in my head! Thanks for passing it along to new bakers.

    Best practice, always sift first! Then again, I cannot even imagine a world without my kitchen scales! Yup, I'm the proud owner of several ones, including one that measures by % for when I'm baking with bread formulas :)

    So glad you posted this because baking is a science and the only way to get the best consistency is to use a scale. And for those who don’t want to at least they know how to get close results by how you showed them to use the cup. 👍🏻

    This is so interesting! Sometimes it's the simplest things that make all the difference! I usually use a scale, but over Christmas the battery died & my cakes were disasters (I couldn't work out where I had gone wrong!)- I was guilty of dipping in the bag! Thanks John! 👍

    Your tip on measuring by volume after fluffing the flour is an EXCELLENT tip!
    I have a culinary degree and in the Pastry class I took we were taught to measure EVERYTHING by weight. Because if you don’t your final product could be terrible. Whereas in culinary adjustments can be made.
    Most recipes written in the USA use the volume method of measuring dry ingredients, you can try looking for foreign/international recipes or recipes written by a chef, I have more confidence using either one.
    I started to vacuum seal most of my dry ingredients in which it preserves and prevents those little pesky moths, but it compacts the flour to a brick making it difficult to work with. And before either weight or volume measurements are taking it has to be sifted. In which it throws the volume measurements WAY off. I wish I could figure out a way to mimic your volume measurement method…

    I’ve watched so many videos about how to measure flour. This is the one video that was very clear about fluffing the flour and sprinkling it in, not just spooning it in! 2:11 I’m so happy 😂🥳 Thank you for being such a great teacher!     Thanks preppy I need this I normally use measuring cups. I see you measure by grand I don’t have a scale as yet but am going to invest in one. I appreciate all the videos you send me they help so much. Also the cake belt you put around the cake pan to level out cakes. I did the foil with the damp paper towel around the cake pan and it worked perfect.🇧🇸

    I love watching your videos. There is always that element of laughter to look forward to. Thank you for sharing with us, your faithful followers. I always fluff my flour before measuring but, I will start weighing from now knowing how very important that is. You once mentioned you were part Greek. I am Greek and was wondering on which side does your Greek come from; mom's or dad's. Please do not stop making videos as that will make us very sad. ☹️ P.S. I watched the spanakopita video that you made with your mom. I think that may be part of the reason for your excellent culinary skills.

    Thanks, John. So many recipes are in cups. I need to make an equivalent chart to hang on the fridge. Since learning the proper way to measure, my cakes are well received. I noticed that "Joy of Baking" gives the cup measures and then also gives just about all of the ingredients in grams, even the spoon measurements. I love that.

    Thank you, thank you! While baking goodies for Easter, our son was watching me bake. I told him that to be successful in baking, remember it's just some techniques, and that it all boils down to basic chemistry [most importantly--measure]. Now, I will add in "weigh". Your demonstration proved the importance of it all! If we all take the "time" to cook and bake let's make it a success! ;o)

    I found this page accidently and omg the best I've ever subscribed. You explain every detail of what your doing just so we dont make the most simplistic mistakes such as measuring flour. I've never seen anyone explain something as simple as thay. Amazing and thankyou. Enjoy watching your shows

    I wish all American recipes were in grams. Such fantastic stuff coming from the USA but I nearly always opt for UK recipes for the weight measurements as they are more accurate 😃 Love your channel 💕

      Yes you are right Samantha. It drives me nuts when they only give you cup measurements and not in grams. I can't be bothered with the conversion table, so like you i go for UK recipe. I really don't get cup measurements.

      I so agree. For accuracy and consistency, particularly when it comes to baking, go metric and use grams.

      Try living in Canada! Recipes are in cups, speed signs are in kilometers, we weigh ourselves in pounds, but meat is sold in kilograms. Oven temp is in Fahrenheit, but weather is reported in Celcius. Length measurements - inches vs centimeters - depend on what age you are (we converted to metric in the late 70s)! 😂

    Yes!! Kitchen scales are the only way to bake! Also good for making sure to not over do portion sizes.

    I always use kitchen scales. BUT recently I went and bought cup measures because of a chocolate chip cookie recipe that uses 2 different types of flour. When I used the gram conversions, the cookie turned out too oily and flat.
    So glad for this tip on how to use the cup measures. never had to use them before. I ended up using more flour for the recipe now, not a lot more, but the cookies turned out better :)

      I find sifting my flour baking soda and even my different sugars also and even cocoa powder and baking powder helps it makes the recipes come out so much better .
      I did that with a sugar cookie recipe and the dough came out perfect I have never had my dough come out so easy to roll out and not stick to everything hardly had to use flour to roll out dough amazing

    I found a sifter/scale attachment today at williams sonoma that weighs,sifts and shoots ingredients into my stand mixer. Excited to use it. No more cleaning measuring cups and getting flour everywhere.

    I just started watching your videos and love them. I prefer weighing ingredients too but didn’t realize they could be off that much if you dipped the cup into the bag. I did learn from Martha Stewart to use the spoon method. Anyway, I I just found a conversion chart on King Arthur Flour’s website that has a big list of ingredients that converts cup measurements into grams or ounces.

    Absolutely love your videos, so informative and you explain everything so well...i tried your red velvet cupcakes and OMG it sooo delicious. also just something i notice in this video...wouldn't the measuring of the flour using the cup weigh more because of the fact that it is measuring the weight of the measuring cup and flour?
