First, let’s have a Trivia.
Paksiw is a Filipino style of cooking, whose name means "to cook and simmer in vinegar".
Lechon - refers to a whole roasted pig, which is well-known and beloved dish in Filipino cuisine.
Lechon Paksiw is made with chopped roast pork stewed in vinegar, garlic, peppercorns, bay leaves and liver sauce a.k.a. lechon sauce. Perfectly sweet and tangy, it's a mouthwatering dish you'll love with steamed rice. Great use of lechon leftovers! This dish is so quick and easy to make!
It is one Filipino pork dish that I always look forward during any holiday season or gathering. It just completes the whole Lechon experience!
THE INGREDIENTS:
Leftover Lechon
Lechon sauce (or use Mang Thomas lechon sauce)
2 tablespoons of salt (to taste)
2 tablespoons of fish sauce (to taste)
5 - 7 garlic gloves (chopped)
1 medium onion (chopped)
Black peppercorns
3 -5 bay leaves
4 tablespoons of olive oil
4 tablespoons of Knorr liquid seasoning
4 tablespoons of sugar (to taste)
1 cup of vinegar
1 - 2 cups of water
