    I like the fact that she knows there’s a lot of us who don’t consume alcohol, it feels great to be acknowledged ☺️.
    Edit: 2 years later and there are still people who reply angrily to this comment 🙂. I'm sorry if my choice of words caused a misunderstanding. I do not say that in a condescending way. I just wanted to express my gratitude for this recipe. It was very thoughtful.

      actually, when you cook with alcohol, it would all evaporate
      wine, for example, is 11% alcohol
      when you cook, this 11% evaporates and you are only dealing with the other 89%. you dont need to worry about being drunk or anything like this is the alcohol is gone

      And a lot of underage chefs. I personally enjoy cooking but can't buy and don't enjoy alcoholic beverages. It pains me whenever I see a recipe that calls for wine.

    I discovered this video last year and now that the weather is getting colder, I went and got some onions and was so excited to make this soup again. I love this video and Sara so much!     Finally, someone who understands that the process of 'caramelization' actually involves sugar! So many people use this term when they mean sauteeing or simple browning. I've even heard it bandied around on tv programs which immediately tells me this cook has no idea. Great video and thanks for the apple cider tip. I will give it a try.

    I will be honest and say that I REALLY don't like onions. But I gave this thing a try and I absolutely loved it. I blended the onions with the broth and it tasted delicious.

    Delicious! You can easily make this vegan with earth balance butter and vegan cheese, etc. Can't wait for the colder months and trying this out!

    Awesome video!! Why would anyone dislike this video? It's my UA-cam pet peeve. Like, it's a recipe for gods sake, not a political video.     FINALLY, I have found the "keeper" recipe. HOWEVER, and as some folks indicated, there are process issues with the recipe instructions, but after research and looking at reviews, I got it. 4 Onions is about 2 pound of onions, fyi. Most people just have ground thyme and not spriggs, but 2 spriggs is 1/4t. It says salt and pepper to taste, but let's deinfe it at 1/2t salt and 1/4t black pepper. Forget the wine and it should be 8oz of SHERRY. A lot of people complain about carmelization and time and taking 45 minutes or an hour. IT DEPENDS HOW HIGH THE FLAME IS. With a medium flame and constant stirring to ensure not burning, you can do it in 25 minutes. In any event, the instructions should be...carmelize onions in butter (NOthing else, it should come later), add Sherry and cook down, add flour and cook roux. The last 3 min or so is when you add the garlic, ground thyme, salt and pepper and stirring throughout all of this. Then add the broth, bayleaf and remaining ingredients

    I never get why people wouldn't want to use wine in a recipe if the recipe says so. I mean the alcohol vaporates so it is 'booze free'.

      +YoShiCrazii Hello, If you soak the onions in water and use a very sharp knife, you will see this almost takes out the crying part of cutting onions.

      +Rubaina dsouza if you freeze onions you will damage them by bursting the cells when freezing. Just soak them in an ice bath then cut them.

      +Natasha Waller In France too, apple cider has alcohol in it (2% - 8%). we usally use white wine in that recipe. But I don't know I keep seeing in north american recipe apple cider (alcohol free) I don't know what it is.
      On wikipedia they say it is an unfiltered apple juice

      +Natasha Waller Yeah we're kinda confusing here. So apple cider in US and Canada normally means unfiltered apple juice. Hard apple cider is generally what we call it when it's alcoholic but sometimes we don't even specify. And apple cider vinegar is always referred to as such and is indeed vinegar.
      So in short what you all outside North America want to look for is unfiltered apple juice but just apple juice works if you can't find it :)

      Cider is alcoholic in Canada too, but specifically 'apple cider' refers to a non-alcoholic beverage made from apple juice and spices that is served warm around the holiday season.

      I wish I had read this comment before making this soup recipe adding the apple cider vinegar made it taste so disgusting and so acidic it tasted like I was eating hot sauerkraut soup advise anyone to not add the apple cider vinegar it is so disgusting

      I wish I had read this comment before making it. I had red wine in the cellar, but I thought I read apple cider vinegar and didn't want to open a bottle. But when I read your comment, I realised my mistake. So I added the wine anyway and about 1tbsp of sugar to cut out the acidity. I also added cheese right into the soup instead of on top so the cheese was throughout the soup. It was good, but not great (as it would've been had I read the recipe properly). Thanks for the warning.

      you actually can add apple cider vinegar! just add WAY less, maybe around 2-3 teaspoons. i added about 2 teaspoons with a small bit of water and it deglazed the pot perfectly. :)

    I had really great FO soup while vagabonding Europe the the early seventies. Got picked up by a couple of tines in France and the feast were always the case when they found out I was American whos father liberated them in both world wars. Always among'st the feast was there onion soup with toasted baguette and fresh cheese of the day. Never had better. I'm sure the taste was emphasized by the wonderful gathering. This video is a must try thank you.

    i made this for dinner tonight and it was great! the only things that were different was the onions took about an hour and a half to caramelize and I used mozzarella instead of gruyere cheese. But it was very tasty!
