      remember Chi-Chi's?
      they did some green topping for chimichangas.
      guessing it wasn't "authentic" anything (bc midwest teenage me liked it) BUT ... can you dupe that?
      it was fantastic and (no lie) HAUNTS me after all these years.
      THAT is my food wish.

    you have the most comforting voice... I have so much anxiety around cooking but just listening to you talk about onions and diced chicken is so comforting.

      Marion Marshall I have anxiety, in general, and the up-and-down alliterations of his voice are actually very calming and soothing to me... Very similar to the grounding exercises/videos that I listen to every morning. I love Chef John!

    This looks so good. Will have to make this. I've cut out red meats and even pork. So now I just eat chicken, tuna sometimes fish. So trying to find easy simple recipes. And low fat. This will be on my list to try. :) Can't wait to try it.

    I made some tweaks to the amounts of spices, included turmeric, and wished I had green onions. I served it over rice with sizable dollops of sour cream.. Definitely will make again. TY💜

    Just made this, but doubled the recipe for lots of leftovers, maybe even a freezer meal.
    Also, I did use thighs because breasts are just plain sad mostly. I also added a few cans of Rotel, blended til smooth, and threw in a few diced jalepenos and a red pepper with the onion. Also added the magical ingredient to most soups and stews... a few nice shakes of fish sauce! Simmered for something like 30 or 40 minutes til thighs were done. Absolutely magical.

    I made this one time, and started the night before. I used a whole chicken and boiled it until it was cooked through, and cut the wings off to better flavor the broth.
    I threw them in and reduced the broth until it was super thick and concentrated, then cooked it the next day with all of the chicken broth and shredded the chicken up and threw it in.
    I browned the onions and tomatillls really well to try and compensate for the lack of browned chicken fond, but tbh I didn't really miss it because it just had that bright, fresh white chicken broth flavor that I love for this.

    OK!! So earlier this week I was searching for a new white chili recipe for a wrestling party I am having today, (always been using the bland McCormic's one), so I came across this one, and let me tell you, it's the bomb mad note! I did make a couple changes: I added a chopped jalapeno to the onions and garlic as I was cooking them, and at the end, I splashed in some milk to lighten the color and add some creaminess, and this was amazing! (Oh yeah, and forgive me, but I was sooooo beside myself, shocked silly when your little trick about letting the chicken stand before you cut into it worked... :D ) So at any rate, I will be trying many more Chef John recipes! Thank you! :D

    i like this recipe a lot...however i add tomato paste and use chik peas...plus i have got jalapenos and my chicken until cooked with carrot,garlic and onion and they reuse the water in the chili

    Chef John, I liked your combo of beans and onion and spices so much that I used that part of the recipe and instead of using chicken I just browned off Bacon and added that and served it as "beans" instead of chili.

    As I worry about the flavor, I would use chicken quarters (red meat). I would roast my peppers and then purée them before adding to the sauce. Since I side with my friends from Texas, no beans, please. Finally, I would put some cotia cheese on top of the serving before eating over freshly cooked rice. The nutty saltness of the cotija cheese complements the dish. Thank you chef John. You have some great ideas.

      There is a Kansas newspaper article from 1877 describing a chili con carne from the San Antonio Chili Queens to have contained beans.
      This "True Texas chili has no beans" notion needs to stop. Its cool if its a personal preference, it just has nothing to do with bean from Texas.
