I love my electric smoker. I smoke lots of vegetables. I've smoked a whole pumpkin and it made into a fabulous tomato sauce with smoked tomatoes, onions, and sweet peppers.
When you introduced Major to us, he seemed to be real bashful and shy. I'm glad to see that he's developed his peronality -- great to see him running around like the rest of the family. Y'all are to be commended for the way you love and respect your dogs. Dogs are the greatest people around -- full of unconditional love and affection. Nothing can make you feel more welcome than a puppy dog.
We made this tonight and added 4 golden potatoes diced up and it is SO good!!! This will be in our regular rotation especially in winter time! Thanks Kent!
I made this yesterday in my ceramic coated cast iron pot. I didn't do the whole load of spices and used a lot of chicken, my wife doesn't like it too spicy. I finished it off by smoking it on my smoker for a couple of hours at 225. Everyone loved it and there's almost none left of the whole pot when they were done ! Thanks for the excellent recipe and video !
With winter closing in on the Rocky Mountains I'm looking forward to making this, and all the other hearty dishes you've come up with! You remind me, with your sense of humor, of my dad (who just passed away) He liked to cook out on open grills too. He was a farm boy from southern Iowa. He and his friend would buy live beef on the hoof and split it (Butcher it) Best steaks I ever had as a kid. (I have been to expensive steak houses that couldn't touch it). Made this tonight and it was amazing! Did one thing different though since I had a whole chicken on hand. Instead of the smoked chicken breast, I followed Kent's beer can chicken recipe (minus the plum glaze, of course). I'll be eating this all week.

I plan my meals according to weather. This week is warmer, so chili is scheduled for next week! And I'd thought I'd cook the chicken last part of this week (chicken soup, chicken noodle & chicken chili). I make big batches, then freeze individual portions! This recipe is going to b used!

I had to stop by again to say THANK YOU! After watching you here, I decided to make this on Sunday for me and the wife. This is probably the best chili I've ever had! I smoked the chicken and used your mesquite seasoning (along with a little chili - lime seasoning from Trader Joe's). Folks, DEFINITELY smoke the chicken and chunk it, too, like Kent recommends... LOTS of smokey flavor in the finished product! Oh, and we picked up your chili seasoning, too... It's great! The best part? Left-overs for the next couple of days. I'm having a bowl right now!

I started with about 10 Anasazi beans that I used for seeds. Last year I got 4.3 oz of beans from my 10 seeds. So I planted about 20 beans this year in a better bed. I got just under a pound of beans from the 20 I planted this year. Next year, God willing, I’m gonna plant a whole mess of them! Pinto beans, Anasazi beans and a couple other types of beans seem to like my version of New Mexico adobe soil so I’m gonna grow a bunch. Next year I might even have enough to eat!
Yum, it looks awesome! I have left over rotisserie chicken (no smoker available) and will make this soon. I will also add frozen corn for color. Thank you for the video! My dogs come running when I cook also, they are great taste testers. My friends dog knicknamed Mr. HOOVER makes sure there is nothing left of what falls on the floor.

Made this recipe tonight. Put my own little south Louisiana twist on it but used my 3R seasoning. This chili came out amazing! The wife and kids loved it. Made it last night. Even without smoking the chicken it was fantastic! I get so many good cooking ideas from Kent! Love this guy. His upbeat personality makes all his videos fun to watch!
When I think of my top five favorite recipes, at least four of them are from Kent Rollins. White chicken chili, smoked Cowboy meatloaf, chicken pot pie, and holiday pork and beans. The fifth is black bean soup by Dave Lieberman. I just made a double batch of white chicken chili and it is just spectacular. I’ll have some now and freeze some portions for later. The funny thing about Kent’s recipes that I never have to tweak them. They are perfect as written. I add a tablespoon of ground cumin to Dave Lieberman’s black beans but never change anything on Kent’s. I just think you can’t go wrong and I appreciate having access to these recipes. I did pick up some bottles of his chili seasoning and they are perfect for the flavor.
My mom always made thus using the turkey carcass boiled down after Thanksgiving. I make it now. Going to use the cream cheese this year. Thank You Kent for always recognizing our veterans.

Made this for the first time tonight. Didn’t have time to smoke the chicken, so I seared it in the Dutch oven first, then finished it in the oven. Turned out so, so good! Can’t wait to make it again and smoke the chicken next time. Thanks for another great recipe!
I make this very similar, a little less broth, but just before it's all done I whip up some cornbread mix, pour it over the top and bake it in the Dutch Oven until the bread is golden brown...delish!
I cook my Sunday Gravy (special tomato sauce) for 6 hours in a cast-iron Dutch oven and it's never hurt my pans at all. Take care of your pants and I'll take care of you. The only distinction I make between my cast-iron pans as I have a couple that are set aside for sweet recipes like pineapple upside down cake. I don't like to cook sweets in a pan seasoned with Savory ingredients. I'll do my biscuits in that same pan as well because they're pretty much neutral. Thanks for all the great content

Both my wife and I agree this is the best food we eat. I always make it exactly as the recipe says but yesterday I realized I didn’t have enough chopped Hatch green chilies. Didn’t want to go to the store so I used an equal amount by volume of The Fresh Chile Company green chile sauce, medium heat. I have to say it was great! It’s smoother than the original recipe, probably because of the puréed sauce? We will probably continue to use Kent’s recipe but will mix it up every once in a while with the Fresh Chile Company version.
Made this the other night and whoowee, it was fantastic. Only thing I would change is 1 small can Hatch Chili. The Hatch chili was very spicy on the first bite or two but after that it was all good.

A chili like this (not probably as good as Kent's) but with about the same ingredients won the last chili cook off I was in by a big margin. Mine took second place and was traditional style.

He was a farm boy from southern Iowa. He and his friend would buy live beef on the hoof and split it (Butcher it)

Made this tonight and it was amazing! Did one thing different though since I had a whole chicken on hand. Instead of the smoked chicken breast, I followed Kent's beer can chicken recipe (minus the plum glaze, of course). I'll be eating this all week.

The Blue Owl Restaurant in Kimswick, MO put their recipe for white chicken chili in the ST. L Post Dispatch paper food section about 30 years ago. I've used it ever since. I plan my meals according to weather. This week is warmer, so chili is scheduled for next week! And I'd thought I'd cook the chicken last part of this week (chicken soup, chicken noodle & chicken chili). I make big batches, then freeze individual portions! This recipe is going to b used!

I had to stop by again to say THANK YOU! After watching you here, I decided to make this on Sunday for me and the wife. This is probably the best chili I've ever had! I smoked the chicken and used your mesquite seasoning (along with a little chili - lime seasoning from Trader Joe's). Folks, DEFINITELY smoke the chicken and chunk it, too, like Kent recommends... LOTS of smokey flavor in the finished product! Oh, and we picked up your chili seasoning, too... It's great! The best part? Left-overs for the next couple of days. I'm having a bowl right now!

I started with about 10 Anasazi beans that I used for seeds. Last year I got 4.3 oz of beans from my 10 seeds. So I planted about 20 beans this year in a better bed. I got just under a pound of beans from the 20 I planted this year. Next year, God willing, I’m gonna plant a whole mess of them! Pinto beans, Anasazi beans and a couple other types of beans seem to like my version of New Mexico adobe soil so I’m gonna grow a bunch. Next year I might even have enough to eat!
Yum, it looks awesome! I have left over rotisserie chicken (no smoker available) and will make this soon. I will also add frozen corn for color. Thank you for the video! My dogs come running when I cook also, they are great taste testers. My friends dog knicknamed Mr. HOOVER makes sure there is nothing left of what falls on the floor.
Thank you Cowboy Kent and Shan. This is one i need to make. I'll serve it on a bed of raw baby spinach leaves, the residual heat in the chili is enough to nearly blanche the raw leaves.

Living in tropical north Queensland, Australia, we are already getting a taste of our steamy, humid, hot summer one month early. Despite the melting heat, I LOVE chili and I love smokey meat, so I will definitely give this recipe a go.

Made this recipe tonight. Put my own little south Louisiana twist on it but used my 3R seasoning. This chili came out amazing! The wife and kids loved it. Served it over some knorr sides Mexican rice. It was jam up. Mr. Kent, you never let us down with your recipes. Thanks a bunch for bringing this to our attention. God bless.

When I think of my top five favorite recipes, at least four of them are from Kent Rollins. White chicken chili, smoked Cowboy meatloaf, chicken pot pie, and holiday pork and beans. The fifth is black bean soup by Dave Lieberman.
I just made a double batch of white chicken chili and it is just spectacular. I’ll have some now and freeze some portions for later.
The funny thing about Kent’s recipes that I never have to tweak them. They are perfect as written. I add a tablespoon of ground cumin to Dave Lieberman’s black beans but never change anything on Kent’s. I just think you can’t go wrong and I appreciate having access to these recipes.
I did pick up some bottles of his chili seasoning and they are perfect for the flavor.

My mom always made thus using the turkey carcass boiled down after Thanksgiving. I make it now. Going to use the cream cheese this year. Thank You Kent for always recognizing our veterans.
When my wife and I watched this she said Inam making this tonight. I said you don't have any Kent Rollins seasoning! She said well go get some lol. So we made it without it but we have to get some lol. This is amazing chili!
If your lactose intolerant substitute cream cheese for cream cheese made from coconut. Its what I did and the meal was delicious

Made this for the first time tonight. Didn’t have time to smoke the chicken, so I seared it in the Dutch oven first, then finished it in the oven. Turned out so, so good! Can’t wait to make it again and smoke the chicken next time. Thanks for another great recipe!

I make this very similar, a little less broth, but just before it's all done I whip up some cornbread mix, pour it over the top and bake it in the Dutch Oven until the bread is golden brown...delish!

I cook my Sunday Gravy (special tomato sauce) for 6 hours in a cast-iron Dutch oven and it's never hurt my pans at all. Take care of your pants and I'll take care of you. The only distinction I make between my cast-iron pans as I have a couple that are set aside for sweet recipes like pineapple upside down cake. I don't like to cook sweets in a pan seasoned with Savory ingredients. I'll do my biscuits in that same pan as well because they're pretty much neutral. Thanks for all the great content

Kent you gave me an idea for a bean soup with rice dish, I can't enjoy spicy food right now, digestive issues, but there's other ways of enjoying my favorite foods, and beans are on that list. Have a blessed rest of your week with your lovely wife, and I'll continue enjoying your videos.
Both my wife and I agree this is the best food we eat. I always make it exactly as the recipe says but yesterday I realized I didn’t have enough chopped Hatch green chilies. Didn’t want to go to the store so I used an equal amount by volume of The Fresh Chile Company green chile sauce, medium heat. I have to say it was great! It’s smoother than the original recipe, probably because of the puréed sauce?
We will probably continue to use Kent’s recipe but will mix it up every once in a while with the Fresh Chile Company version.

Made this the other night and whoowee, it was fantastic. Only thing I would change is 1 small can Hatch Chili. The Hatch chili was very spicy on the first bite or two but after that it was all good.
