Your right, lot of work but worth it opposed to paying lol. I agree about bellies when steam and butter, but when have a lot I blanch them to open and remove the skin, then seasoned flour and fry, I do leave the bellies when fry tho. The 48 hours or so purging them I add corn meal to the water when plan on frying with the bellies.. in RI it's hard not to find cohaugs, I shuck them and freeze with the liquor for stuffies or chowder, if get 24+ I'll just make stuffies but usually get about 6-8.. sure beats paying, or getting in restaurant lol👊
