Very nice combination. I would use some charlot in there instead od the onion. And I wouldn't cook the pasta in it, because it could be overcooked before you reach a good texture for the sauce. I don't think your pasta will absorb much of that flavor anyway, so it's better to focus on having a sauce that will stick to a perfectly cooked pasta.

If your sauce becomes too dry while the pasta is cooking, add some of the pasta cooking water. It contains starch and will help the sauce stick to the pasta. But, if it's too complicated, you can just let the sauce wait for the pasta to cook (I usually cook mine 30s or 1min less than the time indicated on the package) and toss it in the sauce at the end to reheat it.

I love the recipe, but one pan pasta always gives me soggy pasta anxiety 😅 and heavy cream is not cheap too
