One-pan Alfredo Pasta with the deep flavor of chicken.
It is easy to make, but the flavor of the chicken is well absorbed in the sauce, giving it a deep umami taste.
You can make it quickly with one pan, so give it a try.
*** Measurements are on a scale (g), rice spoon (Tbsp), and teaspoon (tsp) (not a measuring spoon)

✤ Ingredients
- 80g, 4 Button mushrooms
- 80g Half an onion
- 25g, 4 Garlic
- 160g Fettuccine (other noodle can be used)
- 3g (1tsp) Salt
- 16g (2Tbsp) Cooking oil
- 20g Unsalted butter
- Black Pepper (turn off the heat)
- 400ml Water
- 150g Milk
- 150g Heavy cream
✤ Chicken Marinade
- 168g, 1 Chicken breast
- 1.5g (0.5tsp) Salt
- Black Pepper
- 10g (1Tbsp) Wheat flour
- 8g (1Tbsp) Olive oil
- 1g (1tsp) Crushed red pepper
✤ Toppings (optional)
- Parsley
- Crushed Red Pepper
✤ TIP
- The reason for adding flour to the chicken seasoning is that it removes the smell of chicken, but when you stir-fry the chicken, the flour is also roasted, which enhances the flavor of the sauce.
- Finish it off with a lot of sauce. It looks thin, but if you put it in a bowl, the sauce thickens.

I made this for my family yesterday and they loved it! I did substitute a bit of the milk and the heavy cream for evaporated milk and also just excluded the mushrooms but it still tasted amazing!

When I was in culinary school, one of my professors referred to this as American Alfredo. He said in Italian Alfredo, they don't use cream in the sauce. It's made with butter and Parmesan and thickened with the pasta water. I've seen Jamie Oliver make it that way, too.
I was worried about all the milk and kept wondering when the cheese would come out 😅
