- Today we’re making Dominican Style Sopa de Res, which is a homemade soup made with beef. Think of this recipe as an easy way of making Sancocho since many of the ingredients are the same. The great thing with this recipe is that it’s simpler. Now it does take a while to cook, but the results are hearty, delicious, and authentically Dominican. The flavors remind me of childhood. Ingredients: Meat
2 lbs Grass-fed Chuck Beef or Short Ribs
1 White Onion
1 Cubanelle or Green Pepper
4 Garlic Cloves
1 tsp DR Orégano
1 ½ tbsp Kosher Salt
½ Sour Orange
½ tbsp Olive Oil
Ingredients: Soup
Seasoned Meat
1 tsp Olive Oil
12 cups Water
2 Potatoes
2 Carrots
2 Celery Sticks
1 ½ cups Diced Auyama
1 Large Yuca
½ tbsp Kosher Salt or Sopita - Chicken Bouillon Cube
1 cup Fresh Cilantro
½ cup Fideos

My Dominican mother ( I'm 100% Dominican ), used to cook the same soup you do. She would do rice and carne desmechada with eggs on the side. At that time we used to live in El Cibao in the DR. When we came to New York, she continued to do it until she passed away.

Yes you can! It will change the flavor of the soup, but it will still give it that classic flavor. I

Hey Chef Zee! Can we use sofrito that we have on hand for the beef? If so how much would you recommend?
Or maduros and slices of corn on cob.
you can definitely use sofrito that you have on hand to season the beef. I would use about 3tbsps for the 2lbs of meat. You really can't go wrong

Hi Chef Zee! Can this be made with beef broth instead of water or would that take away some of the flavors. I’m from Chile & we make something similar called a Cazuela De Res - I do use beef broth for the base but the seasoning is different from this sopa. For example-no sofrito en la cazuela. Gracias!! Oh & I would add some corn on the cob to this! 🤗
You can absolutely use any sofrito that you have on hand. I'd recommend about 3tbsps for 2lbs of meat. You honestly can't go wrong. No worries about adding too much. Just be careful not to make it too salty.

I'm confused about the salt. In the video it seems she added way more salt than the recipe calls for.
