    One of the most common things that I hear people say when talking about switching to a Plant Based diet is that it is expensive. Well, that is just not true.     This show has been so helpful and inspiring to me! Lots of kids in this household to feed. I want to feed them as healthfully as I feed myself but need your expertise in order to make the food taste good to them. The variety is awesome!     Before I even watched this video, I have made that kind of salad with kale greens and avocado with lemon as well. I learned about it watching an Engine 2 video. I was amazed at how tolerable it makes the kale to eat. Massage it really well. It breaks up the fibrous cell walls, and it does make it less bitter. Well, a LOT less bitter. It really is amazing. I find it fun to eat as finger food. No fork needed. And best of all, it is uncooked, so you are getting all the nutrients from the greens without losing it through cooking. This is perfect for new raw foodists. I also add some raisins to the kale salad to add some sweetness, which makes eating the kale even more tolerable.

    Oh my goodness. How am I NOW just discovering this channel?? I've begun transitioning to a wfpb lifestyle since January, even buying a few books to help (lile Forks Over Knives, etc).
    And I've been fretting because I'm not the best cook... watching this has made me realize wfpb CAN be delicious and simple!!!

    Contrary to what everyone thinks and says it is very inexpensive to cook, eat, and be vegan! We saved so much not buying high-prices meats, fish, and all the dairy. Thank you, this was a great show.

      Thankfully many eschew the toxic guilt based intolerant authoritarian animal rights Leslie Cross ideology known as veganism that prohibits animal products while saying nothing about processed refined sugar salt fat/oil etc laden junk food and instead embrace a self- directed WFPB optimally healthy regimen based on objective evidence-based research sans the SJW virtue signaling intolerant authoritarian politics.
      That aside, $10 is definitely boutique. One need not spend anywhere near that amount to provide a hearty balanced WFPB meal.

    I just tried the greens and beans. I was a little skeptical, but it was delicious. I did make a couple improvisations. All my water dried up while I was cooking the onions, so I added some olive oil and more water. I also added a clove of crushed garlic. I was a little shy on kale so I added some shredded cabbage. I seasoned with garlic chili pepper sauce, kosher salt and coriander. Thanks so much!

    oh just like i did for my lunch and dinner today, but not only kale, i added also green bean, red beans, and cooked it with onion and black paper and a bit salt and it was so good and i ate it with a bit rice.

    I put all of this into cronometer and it's around 1000 calories (I was generous w/ the amounts of ingredients in order to give you the benefit of the doubt), so this is definitely not enough food for most people.
    With that being said, it's nutritionally balanced, so all one would need to do is increase the calorie count (add sweet potato or grains to lunch and/or dinner), and you'd be set.

      The body does not crave calories, it craves the feeling of being full. The bulk in this will satisfy any hunger. Are you afraid of losing weight?

    now i know what i am going to do with the kale and black beans i bought yesterday!! great idea! also I have blueberry banana overnight oats almost everyday soooo good. I will add a dash of cinnamon sometimes or some nut butter.

    I love kale but hate it because it irritates my gums due to I need to have surgery to correct root canal but now I know avocado can soften it 😘

    What I love about this video (apart from the cost) is how easy the meals are to put together. I am trying to switch to a low-fat, plant-based diet but I'm so chronically tired and feel so unwell much of the time that I find even fairly simple food preparation difficult and tend to heat up ready-made foods instead. I used to love cooking and hope that love will return along with my energy. In the meantime, this kind of recipe (especially the breakfast and dinner recipes) are perfect, perhaps with an added baked potato or sweet potato. Close to zero effort (shopping and cooking) and they look delicious, too. Thank you.

    For your banana milk cup... I freeze my banana pieces and then I throw them and the rest of your ingredients (plus a teaspoon of plant protein powder when I have it) into a blender to make a delicious smoothie.

    I've been vegan for 53 years. I was once a very well-known vegan Chef when you couldn't even find a vegan product in a grocery store. but one weekend not too long ago a family member did something and took my whole entire estate. everything that I owned that I depended on for retirement as far as monetary and everything of course that's sentimental. also taking away my vegetable garden. now being l and bringing in a very small amount of money a month I'm almost sick from just not being able to get up and make food. a complete turnaround. I went from cooking for thousands to not being able to make my own dinner. if I spent $10 a day and my partner $10 a day that's $20 x 30. 600 bucks a month on food I have about $90 for each of us. Before this would have not been an issue between my garden in the summer and being well enough to get up and make meals I would have found a way around it because that's what I did. but at this point in life that's almost my whole entire month's income. don't ever ever take what you have in life for granted I went for wanting nothing on Thursday to being completely destitute on Tuesday. and lost the honor of taking care of my mother and father in the last days of their life today is one year that I lost my mother and I thought it was just a few months ago. I'm not sure why I just vented that on your page but I was just dreaming about having $10 a day to eat with.

      It am still sorry to hear that. You are so right, that at any moment things can change. I have lived most of my life on a very low income, definitely under the poverty line so I know how to stretch a budget. This day is just an example and it is actually quite a bit lower than $10 a day if you use dry beans. I will be showing more budget friendly meals in the near future 🤗

      I feed 3 people, on $1.90 a meal. $515 a month, is my grocery budget for 1 month, so $515 ./. 3 people = $171.67 per person, per month. ./. 30 days = $5.72 per DAY. ./. 3 meals a day = $1.91 PER meal! I buy only organic. too. We were sick only 3 days with a stomach bug, in a decade. So, how do I do it, especially when all 3 people rarely eat the same thing. A meal plan, and freezer, are VITAL. Granted, I still use bread, flour, etc. I can turn 1/2 a can of pureed pumpkin, into 12 muffins, the same for sweet potatoes, pineapple & coconut, and fruit, etc. Pasta & homemade pasta sauce, (can make 4 cups of pasta sauce, using a 29 oz can of tomato sauce, 1/2 a can of tomato paste, Italian herbs, & garlic & onion powder & 1 TBS of maple syrup) We use about 1/3 a cup of pasta sauce, per person, so 4 cups can last 4 servings, which is once a week for a month. We divide 1 apple into 3rds & it's plenty. We divide 1 can of mandarin oranges, and it's enough. One bag of rice, might last 2 months. 5 slices of bread, become 5 pieces of vegan french toast (yes we still use way too much oil. :( One head of leaf lettuce, lasts a month, for salads, and sandwiches. If the head of lettuce is robust, then only 1 lettuce leaf is needed, to make a 1 cup salad. Kale, lasts nearly forever, as a soup. Only one cup of it, is called for, in the Vegan Tuscan White Bean & Kale recipe I make. I found, that if I eat cooked vegetables, when I get hungry, they fill me up, rather than reaching for a not so healthy snack. One can of green beans, corn, carrots, etc, makes 2 1 cup servings (15oz can) One can make a great vegan corn chowder, with just potatoes, water (use the water in canned corn & new white potatoes, as the chowder base, add potato flakes, to make the water white, then thicken with NON GMO corn starch, add sauteed onions, garlic & black pepper. Add 1/2 a can of NON GMO corn, and 1/2 a can of new white potatoes, to about 1-2 cups of total water. It will make about 3 cups of chowder. So, really cheap. I use the remaining canned corn, as 2 1/2 cup sides of corn, and the unused canned potatoes, become hash browns. The trick, is buying EXACTLY what you need, and no more. We rarely have leftovers. If you only need 1-2 bananas, then separate a bunch in the store. Potatoes, can become many interesting things, hash browns, home fries, French fries, roasted potatoes, baked potatoes, potato pancakes, mashed potatoes, etc. Sweet potatoes, turnips, parsnips, carrots, can also be the same. Beans, can be pureed into a paste, and used in baking, to moisten baked goods, or create a creamy soup base, etc. If you can't use anything up quickly, freeze it. I freeze diced tomatoes, diced onions, soups, pumpkin & sweet potato purees, diced rhubarb, muffins, pasta sauce, baked beans, banana slices (add a bit of lemon juice to preserve the color), blackberries, etc. If you can get a 5 gallon bucket of soil, or a small patch of soil, grow some chive plants. Chives add flavor to many edibles, and the plants are perrennial, coming back every year. The purple flowers atttract pollinators, including butterflies. The purple chive flowers ARE edible. I harvest those too. I pick the flowerlettes off the base, and freeze them directly. They have a little stronger flavor. Just sprinkle frozen chive flowers on a hot dish, and they'll melt immediately. The flowerletts are a striking topping, on purple mashed potatoes! The key, is moderation too. I eat like a toddler's meal. That's all I want, only about a cup per meal. Pureed pears and applesauce, or even apple juice and maple syrup, can be used as healthy sugars. Watch and use the serving sizes, and abide by them, or less than the recommended serving size. If you can''t use up a whole tomato b4 it goes bad, dice & freeze it. When you want to use it (in soup) put the frozen tomato in a blender on the Ice Crush setting, until it's not solid, then pour into a strainer over the heating soup water, which will melt the slush. Press the slush against the sides of the strainer, to remove the seeds and skin. One can do the same thing, to deseed frozen or fresh blackberries.

    This looks good except there isn’t enough calories. I did a quick check on my Cronometer app and it came up to only 852 calories. Nutrition for these meals is rated pretty high (over 80%), of course, but making bigger portions , throwing on some pumpkin seeds, and eating the Lara Bars you meantioned would make it more sustainable. Keep up the good work. We love your show!

      I live in the Canadian boonies. Two leaves of kale is four dollars here. A cauliflower is seven bucks.

      Christy M. True, would not be filling. Also as a vegetarian for many years, raising my kids as vegetarian( my son is 35) still a vegetarian. The reason why folks won’t do it is because the bland boring foods. I noticed that you had no seasoning when you steamed the kale, only onion and water? No! When I steam my kale it is seasoned in a healthy way, and it’s finger licking good.

    Look everyday I go to grocery store there are clearance items. I went to Walmart and large 5# bag of black beans were $2. I can't even imagine how many meals will come from that bag. At least 20. Jill is showing meals that can be reasonably priced. There are always specials and sales. My grocery store has .99cents section of produce. I look there first. Always great deals on produce. Look around instead of saying "I can't do this"

    I will definitely try these recipes....I have mentioned my "almost but not quite vegan" husband before. I say "kale" and he immediately turns up his nose. Kale gets a bad rap. Yes, it can be an acquired taste, but I know It's SO healthy. My husband will eat this, I feel sure. Updates to come......

    Hi what do you think of organic extra virgin coconut i use it a lot to cook with, i also use it on my face, under my eyes, it takes away the bags under my eyes i use it on my whole body, it has luric acid in it and it makes my skin really smooth, also i heard that people can use it in their hair to, and it makes their hair soft. it is also used for medical purposes.

      No need to get orthorexic. Food should also be fun and taste nice. A tablespoon of hot sauce here and there isn't going to kill you, even if it is loaded with sugar and salt. As long as 90-95% of the food you eat is healthy you're good. I've been WFPB for over a year, but I do 'sin' every now and then - hasn't ruined my blood values or made me gain weight at all. Still under 1.7 LDL and have a BMI of 20. Gotta live a little.

    I say the calorie intake is fine...I will not live by what "they" say about the amount of calories a day u should have..."they" told us in school we had to have a zillion servings a day from the four food group pyramid too..look what happened with that..keep up the great videos..healthy and all anyone needs

      You don’t have to believe it, but you should be aware that your body does need a certain amount of calories per day to sustain itself. And just because you may feel full, that does not mean you’re getting enough calories necessarily. Over time, if you aren’t eating enough calories, you will find that you’re in clinical starvation, which is absolutely not healthy. Simple solution: eat healthy, but eat enough calories.

    Questions... Is this $10 per person per day? Also I wish folks would distinguish what type of oats... steel cut oats, quick oats, or rolled oats? (Please be kind - if you tell me quick oats and rolled oats are the same, that's not what I mean.     Just a quick question; I see a lot of people using avacados in their recipes because of healthy fats, etc.
    But I can't eat avacados; are their other foods that would make good replacements/substitutes?

      It really depends on what they are being used for. You could have this kale salad without the avo, just use more nutritional yeast. Maybe add some flax meal or chia seeds 🤗

      I love kale! Grew up eating it in my African American household similar to stewed cabbage (simmered and cooked down in broth). It tastes so “meaty” and flavorful!

      I simply try to only buy fair trade organic. I haven’t really found one that I am totally in love with yet. And, I try to keep it to one cup a day because I know that more than that makes me too edgy and grouchy. 🤗

    I eat 8 cups of kale a day some avocado and sweet potatoe. Do you get gassy? How can I get rid of this? I have been gassy for the past two months probably about to get kicked out of my house from my hubby he is being patient with me lol

      It is perfectly normal to have a lot of gas in the beginning because you are eating so much more fiber and your digestive system hasn’t adjusted yet. It might help for a little while, to cut back on the raw cruciferous veggies like the kale. If you still want to eat it, cook it first. Beans, of course cause gas if you aren’t used to eating them. Eventually your gut biome will catch up and you will have less gas.

    Damn wish we had Trader Joes's in Australia. Cant get non-organic berries for $3 here. Organic cost around $7.50 a bag. Avocadoes can cost up to $4 each. I shop at Spud Shed but they don't have anything organic.

      The food I prepare in the video is for one person but some of the ingredients that you will buy will stretch for several meals like the oats, dry beans, and blueberries.

      we have to keep in mind the pay is a lot more as well. It's all relative.. I have a family member in Canada and a good friend in CA. Yes the cost of living is more but the pay is more. Pretty much evens out
