    Thank you...any idea how the little plunger is pushed up to the open position?

      I believe the metal it's made of, or what's under it contracts and expands due to heat.

    Can you take it out and just work the motor without thermostat? I'm on the Caribbean sea so water is always 23/26 °C

      From what I read on forums, you can.... But the motor really has a specific temp it's meant to run at. If it runs too cool, it's not good for it. That's all I read about it.
