Yes you are. I am white European and I've always loved flavourful spicy food. West African food and West Indian food are two of my favourite kinds. So much flavour. My friend is Jamaican and his mother cooks tasty Jamaican food and she always switches it up, very rarely the same dish more than once. I am trying to learn how to cook this food for myself, it's really interesting.

My great-grandmother was Jamaican and she taught me her way of making this. She did it the basic way because she didn't want to risk overpowering the dish with Scotch Bonnet peppers because she said it would make the dish inedible. Thank you Miss Debbie for showing me how to improve on what "Granny" taught me.

I don't understand how people respond 👎🏽. Ms. Debbie makes you feel like a family member or very close friend. She's respectful, and doesn't use profanity.
She carefully explains every stage of her cooking process in a very simple way. I don't always want to experience a dish, however I do enjoy watching, learning, and passing her recipe to others who will want to try it.
I give Ms Debbie 10☆'s for inviting us into her home for a virtual meal and "a sit down".
Many respects from your American sister in Fayetteville, North Carolina

If you have the time to marinate it overnight that's better. However with Jamaican natural seasoning, once you really rub it in you will get the flavour just as lovely :)

The big oblong potatoes are called Russet or here in the US we call them Idaho potatoes since that state is famous for their potatoes. They would work well in this dish if you can find them in JA. They are good too if you are cooking on an open fire. Just wrap them in foil and put them in the coals to cook. I can always feel the secret ingredient in all your cooking Ms. Debbie and that's the one that comes from the heart. Nuff blessings to you and family.
