Isan Sausage, White Wine, and Mango Sticky Rice: Chef's Night out with Bardot Brasserie

- Las Vegas is world-renowned for its all-you-can-eat buffets and celebrity chef restaurants. However, there's more to Vegas than just what lies on the Strip, and Josh Smith-executive chef of Bardot Brasserie at the Aria-is here to show us the other treasures of the entertainment capital of the world.
Our first stop is Other Mama, a new Japanese-inspired seafood restaurant located in a strip mall in the Spring Valley neighborhood. Next up is Lotus of Siam for what some consider to be the best Thai food in the country, including Isan sausage, white wine, and mango sticky rice. Then it's off to downtown Vegas for whiskey and beers at "the last neighborhood bar in Vegas": Dino's Lounge. We then end the night back at Bardot Brasserie, where Josh whips up a seriously decadent feast of fried chicken, burgers, and foie gras rice pilaf.

Joshua Smith Great episode. I expected a bit more unapproachable restaurants, you're over here mobbing strip mall food like its Michelin star rated. Was that Nick Cage at the thai joint? Classic. I think the inventiveness of your cheese was a bit lost on the grammar squad, but they don't cook. Keep it up chef.
Joshua Smith Great video! It was fun to follow you around Vegas, and hear how you got started in your career! On another note, I'd love more to hear at some point how you developed the tastes on the menu of Brasserie Bardot. After reading the menu the last time I was at Aria, I wanted to include that on our "tasting" tour of Vegas, but ran out of time. It's always interesting to me to hear how chefs prepare their menus and what their inspirations are, then go in and look for those flavors in the food. I'm hoping to make BB a stop when I'm in Vegas in November for the marathon weekend...cheers!!

to be fair he is a little pretentious and I definitely see a lack of passion. Looks like he loves the money and not chef part. Had good connections to get where he is and talks about hard work paying off.
I love seeing humble chefs. This episode is so refreshing.
1977 I got my first restaurant job as a prep cook after cooking in the college dorms. (Think Mystery Meat.) 4 weeks later i was a line cook and working for the best chef ever. He taught me more than a Michelin Stared Chef that I worked for 2 years later. Although I didn't make a career out of the restaurant business, I learned so much. A great Chef not only inspires, but teaches the craft.
Really delicious looking food, and these guys don't seem like pretentious douchebags which is always a plus on Munchies!

The sausage isn't Isan Style but it's Northern style sausage which is the mix of pork chilly and lemongrass. The main ingredient of Isan sausage is rice or glass noodle and mince.

I'm envious of their appetites, even though it was shared they still consumed a pretty significant amount of food over the span of a few hours. I could never be a food show host, I simply can't eat that much.

The main chef in this video freaking needs to learn how to speak French properly, especially if he claims his restaurant serves the top typical French dishes. "Brasserie" isn't pronounced "brazzery." Two "s" in in a row, in French, is pronounced the same way as the "s" in "Snake." Next step would be to learn how to roll his R's like a true French speaker. Now say it, chef, BRRRass-er-RRR-ie.
C'est un peu insultant pour les Francais... il n'utilise meme pas la bonne pronunciation des mots Francophones dans son menu. Meme son type de resto n'est pas bien pronounce. Brasserie, putain/tabarnak! (desole, clavier Anglais qui n'a pas d'accent aigu/grave).
Come enjoy dinner with us sometime. It's true, I don't speak French and have trouble with language but I remember every detail I've ever read about cuisine and it shows in our food. I'm sorry you don't like ME, I know you'd love MY FOOD.

A lot of the dishes sounded intriguing & I have nothing against a good tipple, but tequila shots with a meal? Miller FKN High Life? Bleah .. makes me question his tastebuds overall
