This was fun to watch - my type of cooking 👩🍳 I don't use parchment paper anymore - I don't know if it was a cheap brand that I was using but it did burn in the oven around the edges, Lol I use Tin foil with no problem. Thanks Bobbie for sharing 😊

We only roast veggies till caramelized... Okra, cabbage, broccoli, shredded Brussels sprouts, sweet potato fries, butternut squash, etc Avocado oil, salt and pepper, garlic powder
I really enjoyed this video! Everyone talks about how good roasted brussel sprouts are, and I've never tried cooking them that way. Maybe I'll try it this weekend for Thanksgiving. I love cottage cheese. It tastes great with a vegetarian tomato pasta sauce for extra protein. If you do try it, don't mix the cottage cheese in with the sauce, otherwise it just disappears.
I just made baked brussel sprouts last night. Cut in half, toss in olive oil, season with McCormick Himalayan Pink Salt with pepper-garlic blend, drizzle honey & balsamic. Bake on parchment 400° for about 20-25 min. SO good! We never have leftovers. 😋

You should make the roasted cauliflower again. Don’t cut the florets so small and adjust cooking times. I think you’ll love them. I just used olive oil, salt, pepper and garlic. We love them.

Just between you and me, I hate cooking and my kids only survived to adulthood thanks to fast food, frozen food and microwave food…they both married chefs…so that tells you all you need to know. I too love brussel sprouts, but I’ve only eaten them sautéed in a light butter sauce. But also love them just steamed with a bit of salt. Never thought about making them crunchy. Have you made the baked Cauliflower, rolled in Parmeson Cheese? Supposed to be better than meat? They are delicious. 😋. Thank you for bringing us along while you try new recipes. I’m amazed in the difference in oven temps, (roasted Brussel sprouts), I do a recipe if biscuits that called for 350 oven for 15 minutes, I’ve finally gotten the cooking where it works for me, 450° for 30 minutes, and my over has been calibrated! How can recipes vary so much.?Really enjoyed this video.

Great video. I especially like your sense of humour & honesty. Sometimes when I see cooking videos on fb & Instagram they make it look so perfect. Sprouts are part of a British Christmas dinner & they’re a bit like Marmite, (Yeast extract) you either love ‘em or hate ‘em. I hate them. I love burnt food & when my Mum used to make a roast dinner she would always make a baked onion & burn it. It was lovely. You should try burnt fish fingers. They’re brill. In the UK we say mashed instead of smashed, like mashed potatoes.

So funny, thank you for sharing. I LOVE to cook and rarely have total failure any more (many years of trial and error pre-internet), and girl, you were kinda sabotaged before you started on some of these. It really was not you on most of the struggles. Chick peas: love em. NEVER had success crisping despite several techniques. Either soggy center or risk breaking a tooth, no middle ground. Forget about it. Cottage cheese crisps looked good round 2. Tip: cut parchment paper with scissors, IMPOSSIBLE to tear, it’s actually made not to. All the uneven sizes and time requirements for different ingredients in the roasted things means some parts are absolutely going to burn. Try cutting into uniform size (florets or sliced), add ONLY oil(you NEED a refillable trigger pump oil sprayer-significantly less oil but evenly coats all pieces) and salt/ pepper until almost done. Garlic, spices, cheese and nutritional yeast all burn long before the food is cooked, so sprinkle on for the last 5 minutes. Lastly, the Brussels sprouts pre-roast steam/smash was nonsense. Totally unnecessary. Chop (however small you like, just as long as uniform), spray with oil, roast. Sprinkle extras. Done. I have a lot of experience cuz I LOVE almost burnt foods. 🎉 All brown and crispy! But no smoke alarm. 😅 it’s a fine line. 😬 You’re doing great! Keep experimenting and you’ll find what you like.
I wonder if the cauliflower might be better with less lemon? The recipe called for 6-7 cups florets and maybe the amount of lemon needed to be adjusted to the smaller amount?
19:14 at least your air fryer fries, mine doesn’t, its a combo, oven, convection oven, microwave and air fryer. The only thing it does well is microwave.
I don't know what it is about online recipes - but they never turn out the way the vlogger says they should. I'm with you on that. But I will say I too like burnt and I got that from my Daddy also. I have made the chick pea snack multiple times. I never put them in the fridge. My recipe calls for storage on the counter in air tight container. They stay crunchy. Do you put potato chips, pretzels or any crunchy snack in the fridge? I would think they would lose their crunch as well. That being said, this was a fun idea and I thoroughly enjoyed watching!
I tried Brussels sprouts in the air fryer and they were horrible, maybe try using your oven instead. The results could be completely different ! I have done them in the oven with olive oil, salt and pepper and crumbled bacon bits (cooked) and then sprinkle Parmesan cheese on them when they are cooked and they were really good ! I also tried roasted chicken peas and they never got crispy either, my husband hated them !!! 😂😂😂
P.S. If you like the crispy "burnt" Brussels sprouts leaves...you can make just those. Peel the outside leaves from large sprouts, put them in a bowl, sprinkle them with a little olive oil and toss to coat. Then...spread them on a baking sheet and roast them in your oven. It shouldn't take too long since they are just the leaves. It's kind of like making kale chips...only WAY better!

I seriously think 450 is way too hot (my air fryer is the basket kind and it only goes to 400...so I'm going to try them at that temperature). One of the reasons yours might look a little dark is because you used cheese...and cheese burns pretty easily (remember that cottage cheese?! lol ). Speaking of the cottage cheese...her piles of cottage cheese are quite thick...much thicker than the ones on your pan. I'm wondering if that's why they cooked differently and didn't seem to burn. Last thing...for the cauliflower. I think this is the problem of the missing comma. It isn't a "large rimmed baking sheet", as she wrote. It should be a large, rimmed baking sheet. The RIM doesn't have to be large. It just needs to be a large pan with a rim. :)
I think it might be beneficial for you to take a cooking class that teaches some of the basic scientific principles behind the specific steps taken when cooking and preparing food. You have good instincts, but your Brussels sprouts would have turned out better if you put the Parmesan on last, just as a garnish before the last few minutes of cooking. Also, the chickpeas should not have been put in the refrigerator. They were already cooked to crispy, so should have been put in an airtight container and left at room temperature.

You are not following the instructions exactly in any of these recipes (most of which are ridic, btw.). Surely in the cauliflower recipe you must have noticed that the color of the cauliflower was practically orange, whereas yours was barely anything but white. Obviously you did not add as much paprika as the IG recipe. Maybe that is because you didn’t measure (first rule of cooking) or because you didn’t use the right paprika(sweet vs smoked?) or your paprika, like most people’s, is five years old and you keep it right next to the oven where it is dried out even further. This is just one of the many ways in which you did not follow the recipes “exactly” as you stated you would do. Finding a reliable chef on YT and learning methods might yield better results for you. Editing to add that I enjoy your beauty content very much and you seem to take those experiments and trying new products and combinations of products much more seriously and successfully than cooking.

Your oven temperature was too high for the size of chickpeas you were doing. You don’t need to flatten them down that flat. Try again.
