A delightful fan named Reya sent a selection of red velvet treats to TRY after seeing Dermot say how he liked red velvet in a previous video. And so, our Irish people got to trying all these red velvety yum-yums in this video! All that wasn't tried in this video was gifted to Dermot for being such a red velvet lover! How sweet!

George Fox I love you and Dermot. You need to review true southern desserts and food. A true red velvet cake is made with cocoa powder and splash of buttermilk or vinegar. That reacts with the chemicals in the Cocoa, non Dutch process cocoa, to give it a hint of red coloring. Nowadays I also add red food coloring to brighten the color. So technically is a cocoa chocolate cake. But it is definitely not just a cake with red food coloring

Berto Andon It’s a type of cake. It should only have a hint of cocoa. It’s red and velvety smooth, thus the name.

Originally red velvet was so called because the old fashioned cocoa powder reacted with the cooking process and turned the (devils food cake) cake red. These days the cocoa is processed to within an inch of its life and the reaction doesn’t occur so they use food colouring and hence why the flavour isn’t the same either. Red velvet these days is just red chocolate cake with cream cheese frosting.

For the red velvet cake the color actually comes from the reactions of vinegar and baking soda and the cocoa powder and it also gets its velvety texture from that

WRONG. You won’t get any red from vinegar and baking soda.
The red color comes from the old use of non-Dutched cocoa, which had lots of red/purple pigment in it and tinted the batter red. Today, bakers use coloring agents (natural and artificial) to get that color.
The difference between Red Velvet and chocolate cakes is in the use of cocoa powder versus chocolate.
Where did the beets come in?
@@afcgeo882 The red came from the non-Dutch process cocoa *and* the vinegar in the recipe, not the cocoa alone which is a lighter shade of chocolate brown than dutch process cocoa rather than any shade of red.

Mark Dennehy YEP! The vinegar and the BUTTERMILK (why is no one mentioning the buttermilk!?! My southern grandma would not be pleased lol) react with the anthocyanins in non Dutched cocoa powder causing the traditional dark red color.

For those wondering, true Red Velvet uses non-dutch processed cocoa (where the reddish color comes from though people often add red food coloring to make it brighter) and often has a touch of cherry in it.
