- 「不少朋友喜歡在街市買新鮮鮑魚回家煮,但不知為何煮到很韌。其實煮新鮮鮑魚一點也不難,只要跟著我提供這四個方法,煮出來的鮑魚擔保彈而不韌。」名廚Ricky輕鬆地說。
首先購買鮑魚時,一定要新鮮。建議挑選那些視覺上看來較細少的鮑魚,因為只有仍活的,才懂得蜷縮在一起。相反那些賣相看來潔淨無瑕的鮑魚,因為已死或將近死,並由本身像骯髒的顏色慢慢變了淡黃色,加上怎碰它也不會收縮,看來自然相對地大隻。
第二,清洗鮑魚時,只需用潔淨的水去清洗便足夠。切記不可狂擦它。因為這樣刺激會導致肌肉頓時收縮,到烹調時仍停留在繃緊狀態,口感又怎會軟滑。
第三,一定要用低溫去煮鮑魚。「最省時方便的溫度,便是用攝氏70度的水去煮它15分鐘。煲內的水不可太少,那怕煮六至七隻鮑魚,也最好放到水滿為止。因為水愈多,愈容易維持在平穩的溫度。」
最後待鮑魚煮好之後,便可以𠝹開鮑魚最厚肉的部份,以便烹調時更容易入味。

I tried your cooking method in a pot, more or less 70degs C for 15 minutes and it worked perfectly. How do you use a Sous vide machine to cook the abalone @70degs C For 15 minutes? Do you put in a bag with 70degs water then put the bag of water and abalone into the sous vide bath for 15 minutes? Sous vide would control temperature and time exactly.
Common sense is to increase the cooking time (may be a lot coz bag is used, ready for repeated trials and failures as well). I would follow him here with a thermometer and timer, simply fail-safe . SV takes too long, even for eggs. A really fancy cooking device.
