How to Make Ginger Pork (Shogayaki) (Recipe) 生姜焼きの作り方 (レシピ)

  • Classic Japanese ginger pork (Shogayaki) recipe. Tender sliced pork loin in a sweet ginger sauce, Ginger Pork is one of my favorite homemade dishes. Ready in 20 minutes!

    INGREDIENTS
    1 knob ginger (2", 5 cm; 100 g)
    ½ onion (140 g)
    ¾ lb (340 g) thinly sliced pork loin (I use sliced pork for "ginger pork" from a Japanese grocery store; If you can't find paper-thin meat, slice the meat on your own. See the tutorial on how to cut meat paper-thin.)
    1 Tbsp sake (for pork)
    1 Tbsp all-purpose flour (plain flour) (for pork)
    1-2 Tbsp neutral-flavored oil (vegetable, rice bran, canola, etc) (for cooking)
    freshly ground black pepper (optional sprinkle at the end)
    Ginger Sauce
    2 Tbsp soy sauce
    2 Tbsp mirin
    2 Tbsp sake
    1 tsp sugar

    Ginger pork is actually one of my favorites to make. It’s quick, easy and the beautiful aroma and taste of the ginger mixed with the succulent taste of pork is absolutely delicious. Then you add cabbage and rice and it’s just beautiful! I like to add a few shiitake mushrooms and the juicy taste is just … I’m hungry now

    This looks like a great alternative to using pork belly to save some calories. Have you ever tried this recipe with something like thinly-sliced beef brisket or rib-eye? The same sort of cut you might use for Korean BBQ.

    Using the knife to skin the ginger like that will result in the knife getting dull much faster and quite unevenly. I suggest using a spoon to skin ginger! Thank you for the video and recipe!

    I am not well versed in Japanese cuisine and would like to know what did you serve it with? I see a white sauce and thinly sliced cabbage, soup, rice and pickled veggies?? Thank you for recipe.

      Shredded cabbage is commonly served for ginger pork in Japan. And you see a little container of sesame dressing. I also served with rice, miso soup, and cucumber pickles.

      We eat the day of, but can be still eaten next day.
