- We are entering soup season and this NYT Cooking recipe just needed a few small tweaks to take it to the next level (and make it vegetarian). So this is my take on The New York Times' Potato Soup recipe by Naz Deravian. It is creamy, luxurious, and the ultimate comfort food.
I've challenged myself to cook something different every day for 30 days. Today is day 13! My throat is sore from the lack of sleep, lol.

Just a question…why peel the potatoes? The peel adds flavor and nutrients.
Honestly I peeled them only because the recipe said to, if/when I make this again, I probably won’t!
I like potato skin, but peeling is so much easier than scrubbing. And uses a lot less water.
