    I upgraded the initial recipe :)
    SENPAI'S FRIED CHICKEN:
    BRINE:
    1 whole chicken (cut into 10 pieces)
    4c butter milk
    1 whole lemon (juiced but use the whole thing)
    6tbs ap flour
    3tbs garlic powder
    3tbs onion powdwr
    3tbs paprika
    2tbs cayenne pepper
    1.5tbs black pepper
    2tbs MAGIC
    1.25tbs ginger
    1/4c fresh rosemary
    CHICKEN DREDGE:
    2.5c all purpose flour
    1c corn starch
    1tbs MAGIC
    MAGIC SEASONING
    1/2c salt
    2tbs sugar
    2tbs MSG
    - brine chicken overnight (16+ hours)
    - drain off a little of the batter then go straight into the dredge, pressing it in
    - fry at 300 for 5-7 minutes
    - rest for at least 30 minutes
    - then fry again at 300 for 3-4 minutes

    salt+sugar+msg is for sure the magic combo.
    The only reason I like double dredging dry+wet+dry, is that it tends to hold the "crust" together better, so that when you take a bite, it doesn't separate from the actual meat underneath, if you get what I'm saying. It just ends up holding together better in my experience.

    a few notes (:
    - both the 1st and 2nd fry are both at 300
    - "magic" is just salt with sugar and MSG (like a 4/1/1 ratio)
    - i don't think i'll ever go back to the flour, buttermilk, flour method ever again haha
    - the best brine is buttermilk + another acid (lemon juice, pickle juice and hot sauce are all dank)

      @@getyaw8up Look at the first scene he drops the chicken in and the oil is ripping hot immediately starts frying as soon as the chicken touches it then in the next scene right after it barely even bubbles. Hence it sat on the table for a while and lost the residual heat bro it’s not rocket science 😂😂

      For people who are not american:
      4 cups equals 1 liter buttermilk
      I'm not sure how you're supposed to measure rosmary in cups but it's probably round about 3-4 twigs of rosmary
      2.5 cups equals 300 grams of flour
      1 cup cornstarch equals 100 grams of cornstarch

      Its not in the breading stage so it won't be salty 😁. I usually do a yogurt batter I don't waste eggs on binding the breading. So people do a mayo batters. The mayo batters works well on frying fish

    After working at Popeyes I just fry my chicken like I did at Popeyes. Only thing I add is pickle juice and jalapeno juice to the overnight marinade with all the other spices

      Popeyes and KFC both have the chicken injected with brine at the chicken processing plant. That's what most all copy cat recipes miss.

    Damn dude, that looks good! This is a spin on Eric Haung's fried chicken recipe, right? I saw him on a recent Pro Home Cooks video demonstrating this method but with toasted chilis. Yours looks just as good but also more doable for a lazy person like me lol

    How to make it even better: coat it in flour first, then the wet batter, then flour again, and lastly the batter. This way it will trap the juice inside. The downside is, if the batter didnt hold, the oil will be very angry.

      It can be difficult to film in certain kitchens. I think he brings the hot pot/pan over to the table for video purposes only, gets his footage, than goes back to the stove. That’s my guess at least.

    Pro Tips: Let sit overnight in batter, season and bloom batter prior to placing on chicken, use smaller pan to make batches, keep warm in oven, this will save oil, and the chicken will not burn at the bottom of the pan (You want the chicken to float fry, or "deep fry", so use small pan with high sides). make only 2 or 3 wings at a time. only 1 large piece at a time. Dont worry, you have time to wait there is no rush. Americans have this mysterious "I dont have time for this or that" mentality that is really a big problem.
    Use the oven to keep food warm, if you have toaster oven even better, set on medium and put all the pieces in there to finish cooking and crisping.

    Always season your flour too, and once fully coated let it rest to absorb a bit into that batter before you fry. It will save your grease from going cloudy and dark with all that flour falling off otherwise awesome job! I'm interested in that apple Cider Vinegar secret salt ypu spread on afterwords I bet that's yum

    lol that’s wild to sprinkle MSG on top 😂. Try an alternative recipe without MSG and use seasonings like paprika, cayane, garlic, onion powder, cumin, white pepper, salt and tiny bit of sugar.

    Great recipe Senpai but if I could make one alteration it would be to put the MSG in with the batter marinade.
    Where I live the MSG that's available has a glass shardlike texture which gives a rather unpleasant mouth feel. I feel it works much better when it's dissolved either by the fat of the meat or in a sauce.
    But that's just a suggestion.
