I tried this recipe! It was good! So good! I'll do this again next time. I brined the chicken for 4 hours, and followed the recipe. Next time, I'll probably brine it overnight and add more spices (to the brine). Maybe some pepper and bay leaves (I love bay leaves), also more salt on the brine. The breading mix scared me at first, it looked red and I was worried that it's going to be spicy and my little sister won't be able to eat it, but it wasn't spicy at all. It was perfect! I ran out of cornstarch and only managed to put a half cup but still end up good! And it really did had those nice texture! after frying. I fried it using Palm Oil. Medium Heat for 6 minutes then low for another 6 minutes - my chicken was kinda big, so I cooked it longer. Will do this again! Thanks for sharing this recipe! ⭐EDIT: So I did this again with the complete ingredient (cornstarch). It taste off. It taste like it's lacking seasoning. I suggest removing at least 1/4 cup of All purpose flour, if you don't want that, add a little bit of extra of every seasoning. This is still my go to recipe! ;u; )///

Think about the best chicken you like. where is the flavor located? only in the crust batter and skin? or is it within the meat as well. Or maybe its in the oil. Technically it should be all three. but it begins with flavoring the flesh by way of a good salt brine and buttermilk marinate to both flavor and alter the texture of the meat, making it more tender juicy and flavor rich when cooked. 2nd. The crispy outer skin. here is where the variety is huge. will it be virtually batter less, very caked on batter, super thick. breaded batter, or a light but crispy. What does it look like? and how do you achieve it? Many different roads to execute a particular type of crisp. The chicken displayed here is visually delicious. It looks professionally prepped and cooked. something liken to a prominent fast food chain. But what is the key element to get that result. well, you need some form of carbonation to get that look and thus that type of crisp. The flavor profile is exactly the same. consider the ingredients in great stuffing, there are elements that you would never consider for chicken that are in fact the key ingredients to making a great tasting fried chicken. ingredients like celery salt. also think of soups, again though their are many types of soups consider the ones that have a similar flavor profile as great fried chicken. The ingredients are the same. KFC the flavor is mostly in the batter and crust, same goes with Popeyes. Louisiana fried chicken, think of their key ingredients in their style of cooking, the 'holy trinity' same flavor profile. BUT with all that, their is the process of cooking itself. and the major mistake we tend to make is hot and fast... Sometimes ironically you may want to try boiling your chicken first, and then breading and frying afterwards. LARD. aka crisco. either or shelf wise. LARD infuses a massive amount of flavor!!!. It has a bit of an off-putting smell being pig fat, but like all thing pork the flavor it brings to chicken is ASTOUNDING. so you can always infuse a bit of Lard into your oil of choice. Remember to think about flavor profile that exist outside of the realm of chicken. and try some cheats as well. such as adding Lipton noodle soup packet powder to your batter. again flavor profiles. chicken is one of those things that is so easy that it become hard. because we over think it.

Made this tonight with some bone-in chicken thighs. The outside turned out super crispy and the inside was tender and juicy and perfect. I prefer to season my batter a little more, but this is an excellent recipe to toy with!

I love this recipe but doubled the spices and they still came out light but just right for sellable chicken. Triple spice with your favorites. Definitely brine with more salt. I brine with 1/2 cup salt for every liter, 1 hour to overnight. When brining I always put lots of citrus and only add herbs and spices when I'm roasting instead of frying, but adding chiles to the brine is always nice.

LARD. aka crisco. either or shelf wise. LARD infuses a massive amount of flavor!!!. It has a bit of an off-putting smell being pig fat, but like all thing pork the flavor it brings to chicken is ASTOUNDING. so you can always infuse a bit of Lard into your oil of choice. Remember to think about flavor profile that exist outside of the realm of chicken. and try some cheats as well. such as adding Lipton noodle soup packet powder to your batter. again flavor profiles. chicken is one of those things that is so easy that it become hard. because we over think it.

You need acid (vinegar) to activate the baking soda or baking powder

I love this recipe but doubled the spices and they still came out light but just right for sellable chicken. Triple spice with your favorites. Definitely brine with more salt. I brine with 1/2 cup salt for every liter, 1 hour to overnight. When brining I always put lots of citrus and only add herbs and spices when I'm roasting instead of frying, but adding chiles to the brine is always nice.
