I had Erythritol at home and they have set beautifully, however, it is quite grainy and it leaves an after taste. Is that just the Erythritol, or does that happen with all of the substitutes? I wonder if playing with the gelatin ratio, or putting it into a container rather than drying it out overnight? Since the texture is still squish and meltable even after the drying process. Experiment time!

Using just allulose for the sweetener and cutting down a bit on gelatin. A wholly allulose based marshmallow will be much softer, and while it does firm up a bit with time, it stays gooey for a good enough time to enjoy plenty as fluff. For me, it stays soft and gooey for around a day. While the texture is a bit more gelatinous than sugary fluff, it hits really close to home. Especially when you use cheap-o fake vanilla extract. I'm a sucker for it.
The beginning step where you add the gelatin powder to water and let it rest for a bit IS the "blooming". It's just that mixture that you put into the mixer bowl. Hope that helps?
Absolutely! They may get a little bit gritty (erythritol based sweeteners do tend to crystallise) and will have a cooling aftertaste but they will still taste great. That's what I used to make them before I found Allulose.

Yes they are "nearly" calorie-free :-) There are some calories in the gelatin powder and in the sweetener.

Yes, you just soak it in a small amount of water. There should be no dry gelatin visible once it's ready.

Horrible taste! Waste of munk sweetener,time and other ingredients. It has a awful after taste. Not good
