    I've been learning Greek on Duolingo every day for three years. I understood about 2% of what he was saying: cheese, father, grandmother, and cheese again 😂 Such a difficult language

      It’s super tough. I found that learning Spanish almost fluently really helped me learn other Romance languages like Greek.

      @@zack8879 Knowing Spanish only helps with the pronunciation of Greek. But Romance languages are Latin-based, which Greek isn't, of course.

    A fact that may surprise you: I'm Greek and a typical combo for a light and refreshing dish we typically eat on summer days is feta with watermelon. In Cyprus where I live atm it's also done with halloumi cheese. Both are amazing if you're a fan of sweet and sour dishes.

      I second that! People look at me like I have two heads when I tell them I half Black half Greek and are shocked when they realize that I’m very familiar with most Greek dishes and know many words in Greek because my grandmother is 100% Greek and my great grandparents migrated to America from the Greek island of Ikaria to a small town on the eastern border of Ohio and West Virginia, separated by the Ohio River. It just so happened that after my grandmother was born and grew into a young woman, she met and married my late grandfather shortly before graduating high school and he was African American so they faced many hardships from my great grandparents who were Catholic and were very upset about my grandmother marrying someone who not only was not Greek, but Black as well, and things only got worse when she fell pregnant with her first child before marriage because it was then that she and her husband were sent away to northern Ohio to live with a relative of my grandfather until she had given birth. Her parents refused anything to do with them until they got married as they were ashamed to have a daughter who got pregnant by a black man out of wedlock and so they married. Not long after my father was born and he was much darker than her first son and was treated very directly from his olive-skinned Hazel-eyed brother but everyone except his father, who understood what he was going through and protected my dad and they had an unbeatable bond up until my grandfather’s death at the young age of 40 from contracting Legionnaires due to working in the steel mill. Long story short, my mother grew up not too far from my dad and eventually ended up living here in Steubenville as well. They were introduced to each other by my dad’s brother, my uncle, who was currently dating my moms sister, my aunt. Not long after my aunt had her youngest son and not even a year later my mom had me her youngest daughter. So having one side of my family being Greek and the other being African American I’ve been asked if I was adopted all my life because I’m dark skinned and my grandmother is Olive toned and people are always blown away when I start talking Greek or introduce my grandmother to them and find out she’s my paternal grandmother lol!

      Boy ,are you ready to label people as racists or XYZ phobics, completely ignoring any contexts! This host goes down to the root of European specialties because she's probably from Europe. Why would that be racist? And as far as tastes, to each his own, but one finds the making of cheese or pesto far more interesting than the assembly of sandwiches in a NY deli.

As you can clearly see from my reply I mentioned it’s name and it deleted it’s comment. I’m not labeling the video or the host as racist but the thing that commented that european foods only matter. I think the host is great and her explanation and appreciation of other cultures is great. It’s one commenter that was racist and I stand by my statement. Racists should be mocked and made fun of which is why i refer to it as it and thing but unfortunately it deleted its comment so I can see why you thought I was referring to the video.       You cannot have feta cheese without olive oil. Olive oil is essential with feta cheese.

      Mate in Bulgaria you doesn't buy Feta but White cheese made mostly by cow milk . Feta is only allowed to call feta in Greece. So you actually buy feta only from Greece

    Feta is delicious! It's really amazing how pretty much all cheese is made with the same sort of ingredients and sort of the same procedures but can come out so different depending on so little amount of things.

    I’m a kiwi and used to live
    On Poros island for a couple of years and got feta from this place back in the early 1990s. Have not found a feta as good as this yet.

    First time I had feta I was hanging out with my friend in college and her mother sent her back with a big cut of feta from Costco. We both sat on her roommates bed and ate it all. I've had an affinity for it since.

    The Greek and Italian people have many cultural similarities and a dense and intricate historical intersection and blending... indeed, the word "Greece" is from the Latin language... meaning "Greater", as in the main land of what now is the country of Greece... Sicily and southern Italy were once colonies of the Greek peoples... so many Italians have Greek DNA in their veins, and many Greek people have Italian in theirs... Claudia is the perfect host for this segment... and really any she does!

      The latin word Graecus originates from the (ancient) greek word γραικος.
      The later, possibly means older, ancient and was used in ancient and later years for greeks.
      Greek, greece came from that latin word.

      There is no other people closer to greeks than Italians historically, genetically, and culturally. Despite some cultural differences developed from greek and catholic split and turkic influences on their culture from Turkish colonization.

      And the word Italia is Greek as it was the name of the ancient region of nowadays Calabria which was a Greek colony called Italia and the governor was Italos and his subjects were the Itali...ancient Greeks...when Italy became a country much much much later they chose that name for the new country.

    The only downside of sheep milk is the smell added to the cheese (some people can't take that strong smell) but for me it's very nice. I prefer fetas with only one type of milk (cow, sheep or goat) but that combination looks very good. Thanks for the video and greetings from other side of the Aegean Sea. Still wishing for a future where we can enjoy what we create together without fighting about it. Peace.

      When I was in Istanbul, I found a small tavern owner, who made his own feta cheese it was like heaven. It amazing how similar we are we put feta in everything and every time of the day. Even mornings 😂

      @@dodette Mey, i like to make cheese at home, triple créme is really easy to make and the best of all my close friends and family (the only people i share my home made cheese with ahhahahahahha), they absolutly love it!
      Try to make it! Just one tip: you cant age them for longer than 1,5-2 months without a wooden box, or it become to creamy and collapse.
      Btw, i kinda dont like it, i'm more of a hard and tangy cheese like a washed rind. But triple creme is the favourite of everyone i make cheese for!
      Once its ready, make some sourdough, cut the top of cheese open, and just eat it dipping the bread, like a founde of nature hahahaha

      ​@@dodette Do it! It's really cool and not that expensive! Once you make one, a new door opens for us, cheese lovers ahhahahahahha. I recommend you a book in case you are going on this insanely tasteful (and sometimes not that good taste) experience! The Art of Natural Cheesemaking
      I would surely share some with you, there is one on the cave you may like! But I do live in Brazil, maybe a bit far hahahah.
      My personal fave to this day is one i made for my bday this year. 8 months, raw milk, hard cheese, washed on home brewed mango beer. It was surreal. I made a cheese board with only international Super Gold brazilian cheese (and some out of grid ones ~2 years in a cave, only 4 pound of that cheese ever made~) and this with mango was the best.
      Wine i'm not so expert hahahahha, but i do make liqueor.
      Aaaaa and i have some news for you! I said you need a box to age triple creme for longer than 45 days... Yesterday was bday of a good friend of mine, we opened a triple creme with 90 days that was wrapped on ficus leaves from my garden. IT WAS OUT OF THIS WORLD, and did not colapsed. You know how ficus is good with cheese, both together was really, really good! Going to try some leaves now... kinkan, granada, grape, passion fruit, from the garden. Lemon i guess wont be good. If you have some tip on this!
      My next experience will be a 60 day cheese made with... musarella curd! Made some mussarela and made a wheel with it, aging for 55 days days now! Maybe will open tomorow.
      If you want to go on this journey, i can give you a few tips so you dont start from the begining (cant write this word in english, sorry, beginning). As you see, i love to talk about cheese ahhahaha

    If you're buying feta outside of Greece, check what it's made of, most of the time it's cow milk which as the guy said, isn't real feta and has a very different texture and taste than the real thing

      I always read ingredients and noticed that. Living in America I don’t trust the quality of milk at the mainstream farms here so I ALWAYS choose the one from Greece with sheep and goat milk.

    I grew up with Feta. Fresh bread with Feta and Tomato in the morning. Damn. Feta, strained Yogurt and Olive Oil. These things gave us an empire once upon a time. Edibles Alexander the Great was feeding our army with. Let me tell you a secret only Greeks poses. Strained Greek Yogurt even the ones with 0% Fat feel like Full Fat amazingly. And the texture... Velvet! Unmatched!

      fine chop garlic and red peppers and sotte in lots of olive oil, add Feta and a bit of pasta water to the end until it melts, pur on pasta and enjoy ;)

    Feta is such a versatile and delicious cheese. I personally find the sweet spot to be at 70% sheep/30% goat's milk. Great video again team. Love listening to Claudia! 👏👏👏

    It's not an exaggeration that we eat feta with EVERYTHING. If you think that these blocks of feta are really big, you have to see how much cheese is consumed when we eat it with traditional lentils soup, white bean soup(fasolada) or Briam(Greek ratatouille)

    @1:38 one thing I'm not sure about is she says the rennet used comes from milk. Rennet is not found in milk. It's either produced naturally in the stomachs of calves or synthesized from bacteria.

    at a buffet, i personally sneak corndogs into the buffet so others can enjoy them. I hide 6 corndogs in my jacket pockets. it then, is a joy for me to see other patrons of the establishment eat my corndogs thinking they were part of the buffet

    uhm Feta is better aged in barrels dude from the town next to my grandpa. My family always aged in barrels not only for colour just like wine and balsamic. They used to import most Feta in barrels here in Canada now in those tins. Simple COST. Just like goat milk is more expensive.

    If you want a great healthy breakfast, just slice some bread, put a slice of tomato on top, some feta on top, some dry oregano and some greek olive oil on top. Best breakfast to start your day happy.

    A colleague brought authentic cheese from Cyprus once, he said "it's just like feta cheese" (he must have been joking to get a reaction out of us). I think directly eating a spoon of salt would have had more taste than that. I think I drank 6 glasses of water immediately afterward and I was still thirsty!

    I have never eaten any gourmet or luxury cheeses, but I enjoy watching the cheese series on this channel. I only eat cheap cheeses, such as American cheese on my burger and processed powder cheese on my nachos.

      feta isn't a luxury or gourmet cheese.. it's so sad that you only eat fake/processed cheese. Go to a deli and get your self some great cheeses you will be amazed!

    When I was in Greece the feta was so soft, I could spread it on the bread. Here in Germany it's dryer and very crumbly.
    Edit: Should have maybe not commented before starting the video...

    Another great video, but can you calm down with the colours, the LUT preset was cranked up a bit too far and it's way too intense, the blues were practically luminescent.
